Beef Dips "Mexican Style" - This was a dinner experiment that resulted in something so delicious! Beef is so versatile and there are lots of ways to season it, but I knew I wanted a tasty & rich broth for spicy beef dips so I went heavy on the seasoning. I started playing with ingredients in the pantry and spice drawer. First I tossed the 3.5lb roast in my electric pressure cooker on a bed of sliced brown onion, rough chopped fresh garlic, a chopped fresh tomato, pureéd tomatillos, a couple whole chipotle chiles in adobo, ground Mexican oregano, cumin, coriander, bay leaf, Kosher salt, black pepper, a few dashes of low-sodium Worcestershire sauce and beef broth. When it was done after 1 1/2 hrs or so on high pressure, I shredded the roast, strained the liquid and returned the meat to the juice. I served the shredded beef inside a soft hoagie roll from @samsclub
bakery, added a slice of @tillamook
cheese and set it under the broiler to melt. I added sliced avocado and served the hot sandwich with a dish of the "au jus" & fresh homemade Salsa Macha for dipping, a little @caciqueinc
queso fresco to cool off the palate😉, and baked @oreida
crinkle fries sprinkled with @traderjoes
