Mediterranean cuisine is very much the product of cultural influence and exchange. It can be divided into three culinary regions: Eastern Mediterranean, Southern Europe, and North Africa.
Here, I tried to create a menu influenced by all three: * Eggplants with pomegranate dressing, feta, toasted freekeh & Pomegranate seeds * Beetroots with yoghurt herb dressing, pistachio-pomegranate salsa * Sous-Vide Homemade Sujuk, mayo-harissa, oyster mushrooms on sourdough bread * Spiced prawns with green tahini, caramelized onion and couscous
