🌶 Quinoa Stuffed Peppers | Serves 4
Quinoa is a super food 💪🏼 & these delicious, Mexican-style stuffed peppers are one of my favorites! They’re spicy, healthy, packed with protein, & easy to make
1 cup quinoa rice, cooked in 2 cups vegetable broth for about 20 mins or until fluffy
Preheat oven to 375 degrees & grease a 9x13 baking dish
Take 4 large red, green & orange bell peppers, halved & brush with olive or avocado oil
1/2 cup salsa (I use @heb
2 tsp chili powder & garlic powder
15 oz can of black beans, drained
1 cup sweet corn
Stuff peppers with mixture, sprinkle salt & pepper to taste.
Cover dish with foil and bake for 30 mins.
Remove foil & bake at 400 degrees for another 15-20 mins
Serve with desired toppings- 1 cubed avocado, fresh lime juice, hot sauce, fresh cilantro, diced onion.
