Here are the details on last night's dinner. Second time using this spice mix for the rice and the beans so I actually wrote down the measurements! 🌱😉🌱
RICE (using rice cooker)
- 4 cups Uncle Ben's - 2.5 cups veggie broth - 2.5 cups cold water - 1.5 teaspoons of @captainfoods Seven Spice seasoning - 1.5 teaspoons of Allspice - 1 teaspoon of pink sea salt - 1.5 teaspoons of @captainfoods Garlic Habenero hot sauce - 1 tablespoon of olive oil or coconut oil
Rinse rice and check for debris. Combine all ingredients in rice cooker and stir. Cook on white rice setting for 45 minutes. Stir half way through. Fluff with fork and keep lid closed while beans cook.
- 1 full bag of @bobsredmill Cranberry Beans - 8 cups cold water - Same spices used in rice above (except oil) - 2 teaspoons of organic brown sugar - 1 teaspoon of chili pepper paste (sambal oelek)
Rinse beans thoroughly and check for debris. Combine all ingredients in large pot and stir. Bring to rapid boil, lower heat, cover and simmer for 1.5 hours, stirring occasionally. Keep water level covering beans by adding as needed.
Enjoy with diced raw, sweet white onion, steamed veggies, etc. Cook big quantities like this and eat well for days! 🌱😍🤘🤙✌🌱

The best homemade #glutenfree bread ever😍
1️⃣Almond meal-150 grams
2️⃣Buckwheat flour-140 grams
3️⃣Chia seeds-27 grams
4️⃣3 tbsp psyllium husk
5️⃣1 cup of mixed seeds (sunflower seeds & pumpkin seeds)
6️⃣ 2 tb bicarb soda
7️⃣1/2 tsp salt
8️⃣2 tbsp maple syrup
9️⃣2 tbsp apple cider vinegar
🔟 Water-500ml •••Instructions👉🏽Mix everything and combine thoroughly in a bowl, cover with a tea towell and allow to sit in the bowl for at least 1 hour.
Then put your dough in a loaf tin, place in the oven at 180C and cook for 1 hour and 15 minutes.

Hi guys, today I updated my recipe for my vegan lasagne on my blog. It was by far the most complicated recipe I have ever written and I felt like it was too hard to follow. Although I loved it I used to hate making it because it was so time consuming! I have since simplified the recipe and removed some of the layers as well as added a couple more veggies in there to make it even better. I now make this about once a month and freeze it. It's an awesome recipe to pull out when the baby makes it difficult to prepare any food. I'll add the link to the updated recipe in my Insta story as usual. Happy Monday 💛💛
creamy, cheesy, sexiness in a bowl, this 🎃 VEGAN PUMPKIN RISOTTO 🎃 recipe is something i’ve been working on for the past few months, adjusting proportions of the ingredients between trials to finally achieve the perfect rich pumpkin flavor and creamy texture in each and every comforting spoonful. this risotto is like fall in a bowl, perfect on a chilly fall night, so warming to the soul, it’s like healthy mac ‘n’ cheese, definitely a comfort food. doesn’t this look absolutely delectable? oh my goodness i’m craving it already just right thinking about it! 👅// this was my first time making and eating risotto! so i was a little unsure of how the final consistency was supposed to be. but, with some trial and error, i think i pulled it off! this was insanely delicious and creamy. i made it for my parents and they thoroughly enjoyed it, said it had great flavours. and you guys, it really doesn’t get any better than this. mmmmmm……the aroma was so lovely, and the taste was so satisfying. it’s one of those foods that you just want to eat slowly so you can enjoy the chewiness of the rice 🍚 and the delicate taste of the cream sauce. yes, i said delicate. this pumpkin cream sauce is not slap your face with the taste of a fall gourd strong, there’s just an essence of the pumpkin and the cream. it’s soft, like fall leaves floating through the air. like silk against your cheek. like puppy fur. like….. okay, i’ll stop 😜// i have to thank my omma for the inspiration of this dish, her original recipe contains cheese and chicken broth, but this vegan risotto is so amazing most won’t even know the difference… just don’t tell them hehe 😬 once people know it’s vegan or healthy somehow it plays mind games with their taste buds lol. i’m trying to get creative in my plant-based 🌱 cooking for my family, so i’ve been looking at healthier alternatives that will be enjoyable to them that will help replace meat and dairy. one step at a time right? we can’t expect everyone to be on the same page when it comes to eating… would be nice but sometimes you just gotta meet them half way.

To make this easy banana ice cream, you only need 3 frozen bananas, 1 tbsp cacao powder and a food processor or high speed blender. Cut the frozen bananas into smaller pieces and blend them together with the cacao powder until smooth. (optional: add some water or vegan milk) That's it. 😋
