I’m a day late for National Chocolate Chip Cookie Day, but full disclosure, I had no idea it was going on 🤷♀️ Coincidentally, I made this chocolate chip cookie no-bake cheesecake this weekend, so problem solved!
Do you have a few go-to cookbooks or blogs that you just know EVERY recipe will be good? I’ve made everything from the @chrissyteigen
cookbook and every single recipe was amazing...I’m not even exaggerating a little. For blogs, there are a handful of dessert bloggers that I use regularly. One is @beyondfrosting
, her stuff is always spot on. Every season, I make something from her blog, and it never disappoints. Earlier this year, she posted a no-bake cheesecake, saying it was her best ever. I’ve been intrigued ever since and everyone who tried this cake agrees 😍 It is THAT good.
This cake has a thick chocolate chip cookie layer followed by the no-bake cheesecake and then topped with chocolate ganache, whipped cream, and mini chocolate chips. It’s already gone which is good bc I would have eaten half of it, no doubt 🍪
1 tube refrigerated Pillsbury chocolate chip cookie dough
8 ounces white chocolate
1 ½ cups + 4 tablespoons heavy whipping cream, divided
½ cup powdered sugar
16 ounces (2 pkgs) cream cheese (must be full fat)
½ cup granulated sugar
