I’m sure every single post you’ve seen today is all about how beautiful the weather is, but I’m just gonna add to that list!! I’m looooving how sunny and warm it is! Warm sunny days call for salads like this no 🤷🏼♀️ ☀️ Needing a pimped up salad to enjoy in this warm day? Try this out-
For the chickpeas:
Pre-heat the oven to about 200C.
Drain, rinse and dry yo’ chickpeas before adding your preferred seasonings (I ❤️ Himalayan pink salt, pepper, paprika, cumin and nutritional yeast). Place them in the oven for about 20 minutes until crispy!
For your salad:
Roast of your fave veggies (I just add them in with the chickpeas).
Add your base salad leaf to your bowl (I la-la-love spinach), add the essentials- 🍅 🥒and prepare your 🥑. Once your veggies and chickpeas are ready add them to your bowl and top with the 🥑. I also personally love to add a drizzling of tahini and finished it of with a sprinkling of pomegranate seeds for that fresh POP!
