SWEETPOTATO CINNAMON BREAKFAST MUFFINS
Ingredients : WET
Sweetpotato boiled & mashed (medium) 1
Virgin coconut oil 2tbsp
Organic jaggery powder 2tbsp
Flax gel /egg 1
Milk /nut mylk 1cup or more
Ingredients : DRY
Rolled oats powder 1cup
Wholewheat flour 1/2cup
Cinnamon powder 1tbsp
Ginger powder 1tsp
Himalayan pink salt 1/2tsp
Baking powder 1/4tsp
You can add :
Nuts, cranberries, chocolate chips etc
Flaxgel : 2tsp flaxseed powder warm in little water. Flaxgel is egg replacement for vegans /vegetarians.
Gluten free : Skip wholewheat flour.
Method : Preheat oven 375degrees. Line your muffin tray.
Now gently mix wet ingredients with dry ingredients.
Lastly add nuts of your choice , chocolate chips etc.. (I have added dark chocolate chips & cranberry)
Fill 3/4 of muffin mixture into your muffin tray and bake for 10-12 mins at 180degrees or till done.
Muffins can be stored in airtight box in refrigerator 2-3days.
You can freeze it too.
