Fruity is my favourite kind of salad. Featuring a super easy blueberry vinaigrette which I mix in a magic bullet:
⭕ 1/4 cup blueberries
⭕ 2 tsp. Balsamic vinegar ⭕ 1 tsp. Honey
⭕ 1/2 tbsp. Extra-virgin olive oil ⭕ 1 tbsp. water
Makes enough for about 3-4 salad bowls depending on how saucy you like it 😉
I love a good Salad, I aim to eat 1 salad everyday as one of my meals. Since limiting my dairy intake I’ve missed out on one of my favorite salad, Kale Caesar. Well today I created the best Dairy Free/Oil Free Caesar Dressing and it was both incredibly easy and so good! Here’s my recipe: 1/4 cup of Hemp Hearts, Juice of 1 Lemon, either 1 clove of minced garlic or a bunch of Trader Joe’s Garlic Salt, 2 TBS of Brags Nutritional Yeast, 1 TBS of Apple Cider Vinegar, 1/2 tsp of Dijon Mustard, Fresh Cracked Pepper and extra Sea Salt if you used fresh garlic. Combine all ingredients in your blender and blend it up until smooth! You can add a little water to thin it out but I would add 1 TBS at a time until you reach your ideal consistency. I’m now obsessed with this dressing and need to have it on hand at all times! I was even dipping my raw cauliflower and broccoli in it and scrapping the sides of the blender. If you try it, let me know how it turns out for you. To make this exact salad I massaged Tuscan Kale with lemon juice and less than a tsp of olive oil, added my dressing and mixed it really well, topped it with a grilled avocado and hemp seeds. You could top it off with any protein to make it a complete healthy meal. Enjoy!

Boston lettuce, wild rice, edamame, tomatoes, pistachios, black currants, avocado, orange balsamic vinegar and a drizzle of plum cashew dressing.

There are a number of studies illustrating that in the past 50 years radical changes in the common American diet have cause significant damage to the human body resulting in increased inflammation throughout the body and in particularly the brain. .
The brain is highly sensitive to inflammation as it disrupts cellular signals and communication. .
When the brain becomes inflamed it’s only protection is adequate levels of the anti-inflammatory omega-3 fatty acid. Without adequate levels of this omega there is increased neuro-inflammation and cellular disruption.
Brain inflammation has been directly linked to depression and anxiety. .
