I had cactus 🌵 for breakfast, what did you have?? For real though, lots of people know you can eat the prickly pear fruit that grows on cacti but did you know that you can also eat the cactus pads, called nopales? They're a good source of riboflavin, vitamin B6, copper, iron, fiber, vitamin A, vitamin C, and vitamin K, calcium, potassium, magnesium, and manganese, and they can help improve digestion, aid in weight loss, improve metabolism, and are even a good source of antioxidants which can help prevent cancer. They're used a lot by vegans to mix with eggs and use in tacos as a meat replacement and I like them that way but also just stir fried with all mah veggies! They have a delicious flavor in my opinion - slightly tart but with a good crunch to them. I get mind from my local farmers market, but some of my grocery stores carry them as well.
