I mixed it all up in a bowl and then soaked my Asiago bread in it 😍 Cooked it on low-med and then topped it off with real maple syrup and berries! "Half your plate should be vegetables" is a common Naturopathic recommendation. There are great reasons for that (fiber, vitamins, minerals, antioxidants to name a few), but what does that look like & how can it be done? This is one example of a vegetable-rich breakfast that fits the bill. Pictured here is a "veggie roast," a dish our Dietary Counselor, Rebecca, relies on through the cooler months. To make it simply chop up your favorite hearty veg (e.g. Acorn squash, fennel bulb, purple onion, & a bunch of kale), drizzle generously with your preferred oil, add salt & pepper, minced garlic (if you enjoy garlic be generous with it!) and your favorite spices (she uses a combination of paprika, coriander & cumin, or an Italian blend). Toss to coat, pop it in the oven at 350 until all can be pierced with a fork (45-60 min), and use it as the base of dishes such as this or a salad topper for the next several days! 'Donkey Waffles' Vegan waffles with fruit compote and coconut foam 👌🏼 I like traditional waffles, crispy exterior and fluffy centre. But these were surprisingly good for a vegan alternative! Plenty of flavour with a nice soft chew, but the stand out was the compote with this dish! So much flavour and zing💥 The coconut foam melts really quickly but it's great to soak up with the waffle. Here's the Recipe 👇🏼 . 🍴INGREDIENTS 🥄 -1 cup Honeyville Almond Flour -1/4 cup Bob's Red Mill Coconut Flour -1/4 cup erythritol -3/4 teaspoon baking powder -1/2 teaspoon salt -3 tablespoons whey protein powder (I like Isopure zero carb) -7 ounces full fat coconut milk (1/2 can) -2 tablespoons olive oil coconut oil or ghee -2 large eggs -1 large egg white -1/2 teaspoon vanilla extract -1/4 teaspoon stevia glycerite . 👩🏻‍🍳 DIRECTIONS 👨🏼‍🍳 -Measure and add all of the dry ingredients to a medium bowl. Blend together well with a hand mixer or a whisk. -In a smaller bowl, add all of the wet ingredients and blend together with a hand mixer. -Pour the wet ingredients into the dry ingredients and mix thoroughly with a hand mixer until all of the dry ingredients are completely incorporated. -Heat a skillet or griddle over medium heat. Spray the surface with baking spray or use oil to lubricate. Pour pancake batter using a 1/4 cup measuring cup or a small ladle into the pan and spread the batter evenly into a circular pancake about 3- 4 inches across. One of my best friends is Pinterest when it comes to creating healthy meals. I don’t always follow recipes, sometimes I browse to find inspiration before I go grocery shopping. . . . These Protien waffles have 3 ingredients: 1/2 cup egg whites 1 scoop PVL plant Protien (chocolate) 1/2 tsp baking soda . . . You can spice them up with any toppings of berries, nuts, seeds or nut butters, and change up the flavour of Protien to make it your own. I added 1/2 cup 2% Greek yogurt with 1tbsp peanut butter as my topping. Relatively high in protien so in my next meal I will keep it more plant based and fibre dense to balance it out.
