INGREDIENTS 3/4 cup oats 1 tbsp almond butter handful of raisins 2 tbsp hemp seeds (you can skip them or swith with different seeds, but I love all the health benefits of hemp) 3/4 cup plant milk . METHOD Put all the ingredients in a jar and mix well. Put the lid on and store in the fridge overnight. I feel like I'm running a cafe this weekend, making 2 different meals for breakfast 2 days in a row! Today hubby and I had potato & carrot hash browns with mushrooms, onions, silver beet and corriander hummus. He doesn't like hummus so more for me. The kids had buckwheat, banana & almond pancakes with vanilla bean coconut yogurt, kiwifruit and chia seeds. I love the weekends, it's the only time we get to eat breakfast with my husband so I feel like making an effort to do something special. I'm also loving cooking hash browns in the sandwich maker. What does 'self-care' look like to you? ➳ To me, it's making myself a proper breakfast rather than falling into the trap of not eating, or eating something with no nutritional value. These are vanilla & coconut oats, and I'll post about them soon. ➳ To me, it's a cup of tea - or perhaps a whole pot. Tea works wonders. It's so delicious and so warm and comforting. I like fruit teas, but peppermint is my all time favourite. ➳ To me, it's a little bit of dark chocolate as a treat, to get the endorphins up and add a little extra sweetness into my life. Just a little is good for you, remember. ➳ To me, it's reminding myself that I am incredibly loved and cared for because on a bad day, it's easy to forget. A letter, a hug, a smiling face; I am not alone. ➳ To me, it's nature - whether that be a bunch of flowers or a glimpse of the ocean. It's soothing, but also makes me feel alive and I can't help but smile at the beauty. . Never forget to dedicate time to care for yourself. Whether it's a whole day or just an hour; look after your mind, your heart, your body, and your soul. . This was my morning yesterday, with my partner on the phone. I didn't post into my stories like I usually do for breakfast, I wasn't online or existing anywhere but in that present moment; attempting to slow down as I'd had a few stressful days where emotions and negativity were catching up to me. I made a good late lunch/early dinner for myself too (a salad of roasted and seasoned chickpeas, kale & quinoa with beetroot, salted crispy fava beans, red onion, coconut flakes, red pepper, avocado, tomato and an orange, balsamic, tahini & mustard dressing). Then I edited some photos quietly, and had an early night. This morning I'm feeling a little better. Maybe even ready to take on the world again. As much as one loves to eat all the Greek yogurt and honey for breakfast, I really have missed my overnight oats! As you know, my holiday gain came in at 4.5lbs... the next day (today) I weighed myself and lost 3lbs... that water weight is coming off QUICK! Science and the body really is magical. Para los que me preguntan, Les comparto mi desayuno preferido por estos días, Cae bien antes de entrenar cuando se está realizando trabajo de pesas! Ya que la avena es un carbohidrato simple y una excelente fuente de energía para empezar el día!
