The sky was so beautiful today when I went for my walk. Some of the colors made it into this photo, but it reminds me how much I appreciated it. ☺️ was definitely craving some mango this morning, and wow that really hit the spot. Perfectly sweet. The cherries have also been super yum, and I just don’t want any of this yummy fruit to go away. 🍒
Mulberry Cinnamon Oats
1/2 cup rolled oats
2 tbsp dried mulberries
1 tbsp ground flax seed
1/2 tsp cinnamon
1/8 tsp salt
1/4 tsp ginger
1 mashed banana
1/2 cup milk 🥣
As per usual, mix everything except banana together and soak overnight in the fridge. Mix in banana prior to serving and adjust seasonings as desired. Top with your favorite toppings! 🍒🍒

That's it! I know this is a bit confusing because I topped it with raspberries, but that's all I had on hand.
How about a bowl filled with the best porridge ever? (Ad) Made these bowl by using oats in a combo with almond protein powder. I've never tried it before, but I know what's gonna be my new fav breakfast 😎
It really tastes much more like almonds and adds a little extra protein to your diet, topped with more almonds, coconut crisps and fruits to give it sweetness. And of course - chocolate should never be missing haha, it's all about balance isn't it? ⚖️🍫
I usually don't supplement protein, cos I don't really like the flavour of most powders, but almond is my addiction and I guess that's why almond protein is so tasty for me .
For the porridge bowl: 80g oats, 20g almond protein, some vanilla, and 250ml nut milk 👉🏻 bring to boil 👉🏻 place in a bowl and top with whatever you fancy 🍫🍓🍉🍇

Gestern durfte ich das Krankenhaus verlassen, und ihr könnt euch sicher vorstellen, wie glücklich ich war, dass ich wieder in meinem eigenen Bett schlafen durfte. Es geht mir gut, ich muss zwar immer noch Antibiotika nehmen, aber bis zum Urlaub sollte dann auch das erledigt sein 😊 Beim Essen muss ich ja noch etwas aufpassen, darum habe ich mir heute einen Griessauflauf gemacht. Das war so mega lecker, ich hätte die ganze Schüssel alleine aufessen können.
Die Aprikosen für das Kompott musste ich halt schälen, weil ich noch keine Fruchtschalen essen darf. Aber was macht man nicht alles 😊😆 Das Rezept ist für 4 Personen. Ich kann mir vorstellen, dass man auch 4 Tassenkuchen daraus machen könnte. Werde ich demnächst testen und dann auch die vegane Version ausprobieren.
Wie läuft es bei Euch so?
Habt einen schönen Abend ihr Lieben ☀️🤗 Griessauflauf:
3.5 dl Milch (ich habe Magermilch genommen)
0.5 Teelöffel Salz
1TL Vanille Extrakt
75 g Dinkelgriess
4 Stück Eigelb
25 g Kokosblütenzucker
4 Stück Eiweiss
1 dl Wasser oder
40 gr Kokosblütenzucker
1 Stück Zimtstange
500 g Aprikosen
In einer kleinen Pfanne die Milch, Salz, Kokosblütenzucker und Vanilleextrakt aufkochen. Den Griess einrühren und auf kleinster Stufe 10 Minuten ausquellen lassen. Dann in eine Schüssel geben, decken und etwas abkühlen lassen.
Eine Auflaufform mit Butter oder pflanzl. Margarine ausstreichen. Den Backofen auf 160 Grad vorheizen.
Die Eigelb mit dem Zucker (1) zu einer Creme aufschlagen.
Die Eiweiss steif schlagen.
Zuerst die Eimasse unter den noch warmen Griess rühren, dann den Eischnee sorgfältig unterheben. In die vorbereitete Form geben.
Ca. 35 Minuten backen.
Für das Kompott Wasser, Zucker und Zimtstange in eine mittlere Pfanne geben und aufkochen. Die Aprikosen beifügen und zugedeckt auf kleinem Feuer nicht zu weich kochen. .

roasted almond & himalayan sea salt oats in almond milk overnight and ate it in the morning with my favorite toppings. oh also made chocolate nicecream (blended a frozen banana with cacao powder until smooth) and swirled it all together in the bowl. cold, creamy and satiating.

1. Homemade coconut milk (because I still haven’t had a chance to go grocery shopping since returning from Germany 🤷🏻♀️) - blend 1/4 cup of dried coconut with 1 cup of water 🥥🥥🥥🥥
2. 6 frozen strawberries 🍓🍓🍓🍓🍓🍓
3. 1 frozen banana 🍌
4. 1 scoop @bobsredmill

Super simple and delicious!
Gluten-free & Vegan ORANGE BUTTERMILK PANCAKES. These pancakes taste like an orange dessert. The melted butter in the batter promotes a beautiful golden color & they basically melt in your mouth. 🍊
MY RECIPE: (Makes 24 pancakes)
1/2 cup oat flour
1/2 cup brown rice flour
1 cup Bob's RM 1 to 1 baking flour (GF)
2 Tbsp ground flax seed
Zest from 1 full orange
1/4 fresh squeezed orange juice
2 cups unsweetened coconut milk
1 tsp apple cider vinegar
4 Tbsp maple syrup
1 Tbsp vegan butter (melted)
3/4 tsp salt
4 tsp baking powder
1/2 tsp cinnamon
Coconut oil for frying
1. Mix all dry ingredients in one bowl.
2. Add apple cider vinegar to coconut milk & stir to create a vegan buttermilk.
3. Add the rest of the wet ingredients to the "buttermilk". 4. Combine wet with dry ingredients.
5. Fry cakes in coconut oil on a non-stick pan. I like to use an ice cream scoop for evenly sized cakes.
6. Serve with vegan butter, maple syrup, berries, coconut whip cream or whatever toppings you like. Enjoy!

These overnight oats make waking up after big days and long nights just a littttttle easier.
Cookie Dough Overnight Oats:
1/2 cup oats
2 tbsp chia seeds
1/2 cup almond milk
1 tbsp maple syrup
1-2 tbsp cashew butter
Splash of vanilla
Pinch of salt
Mix ingredients and store overnight in the fridge.
Chia seeds are always something I add to my overnight oats. They contain mucilaginous fiber, which is super healing for the gut. Plus they contain lots of antioxidants, omega 3s, protein, and calcium. And they always make me sing ch-ch-ch-CHIA

OMG. So much yumminess in this morning’s homemade vegan smoothie! Made with 1 frozen banana, 3 dates, 1tbsp flax, 1tbsp almond butter, 1tsp raw cacao, a splash of coconut milk and ice cold water. My intention was to bring it to work with me so that I could sip it during client sessions, but the darn thing was so delish that I downed it pretty much in one shot! 😛

This morning's breakfast was something light and it was quick too. Overnight oats and fruits. I mixed the oat with milk last night and sweetened with Tropicana slim. Then put the fruits on top. Bon Appétit 😋😋 So I have 1/2 cup raw oats, 2 heaped tablespoons full cream milk, 1 medium banana, 1/2 cup mango. Total 430cal. Of replication please use skimmed milk, same amount, you'll save 60cal and the total can come to 370cal.

Not gonna lie I am already dreaming of breakfast over here 🤷🏻♀️ I’m feeling something a little extra since it is Friday tomorrow 💃🏻💃🏻 I’m loving this miso caramel sauce that I tried the other day. Sounds weird but is actually really good. And hey I have a recipe down below 👇🏻👇🏻
Miso Caramel Sauce
- 1/2 tsp miso paste
- 1 medjool date
- 1 tsp tahini
- 1 tbsp hot water
Add all the ingredients to a bowl and mash together. Serve with some warm oats and anything other toppings you desire, I went for some yoghurt and granola 😊
And some days breakfast doesn’t look so stylish because I eat in the Gym , but I keep my food choices healthy and according to my Fitness program. Have a lovely Wednesday guys ! ✌️💪
