Although most days I’m Intermittent Fasting for 16:8 (eating window of 8 hours and fasting for 16, I basically skip brekky) this is a delicious creamy brekky for the win, including kids! Or you can have it for lunch.. snack, whenever you feel like✌🏼
Why should you make it?
It’s creamy, satisfying, filling, using leftovers, wholesome and yum!
1,5 cup cooked rice (can be any rice, brown, red, white, hello leftovers!)
1 pack of 200ml coconut milk
1/3 cup of orange juice or substitute with water
1 tbsp maple syrup
1 tsp ground cinnamon
10 cardamom pods (optional)
1/2 cup (frozen) mixed berries: strawberries, blueberries, cranberries, raspberries
1-2 tsp palm sugar
2 tbsp orange juice
Boil coconut milk with cardamom pods until cooked on low heat
Remove the pods
Add cinnamon and pomegranate powder, maple syrup
Let simmer for few minutes
Remove to a bowl and let it cool
Wash the saucepan
Add all the berries
Add sugar and juice
Simmer for few minutes and stir until broken down and get a compote/coulis consistency
Transfer the compote over 2 glasses
Add the rice porridge on top
Add more berries and cinnamon and pomegranate powder on top

This morning's pre brekkie... sprouted millet (ragi) porridge with green grapes and soaked almonds.
Of late I'm obsessed with sprouting any and every thing I can lay my hands on.
Also, I'm trying to incorporate the humble yet mighty finger millet in its eclectic avatars into our daily diet.
Surprisingly the millet sprouted in no time... perhaps owing to its miniscule size.
Fat free milk, a dash of sugar and a pinch of cardamom...is all it took to transform this nondescript seed into a lip-smacking power breakfast.
Tastes good warm off the stove or chilled until it coagulates into a thick custard-like consistency.

Been loving veggie tofu scrambles lately 🌈✨🤤 They’re just as easy to make as scrambled eggs!! All you do is mash half a block of organic tofu (I used one from @traderjoes
), cook it in a pan with your fav veggies (I had mushrooms, red onion, grape tomatoes, spinach) & add nutritional yeast, turmeric, black pepper, pink Himalayan salt, garlic powder & onion salt and mix that all together for about 5-10 min and you’re good to go! When high carb day falls on #toasttuesday
🙌🏻 it honestly hurts my little heart to see how many messages I get about y’all struggling to eat carbs. The media has completely warped society’s connotation about carbohydrates. If people knew the science behind them and how beneficial they are, you wouldn’t be afraid of a little piece of toast. Let’s be real, people who are overweight claiming carbs made them fat are eating chips, pasta, sweets and other processed crap loaded with fat. The reason I’m able to eat so many carbs is through carb cycling. I have two high carb days a week, strategically on my leg days to help with glycogen in my muscles. I also slightly lower my fat intake on my high carb days. This switch up in macros keeps my metabolism working and adapting. Just like you should change your workout, you should change your eating pattern! If you struggle with fear of food, macros, or carb cycling, then DM me! I’d love to help you or even coach you.
