Pretty good for my first brisket. Personally not a big fan of fatty smoked briskets. Fat is for porter houses and ribeye. A successful cheat meal with much leftover. Also today I had a few @lost40beer

“Haters gonna say it’s burnt”. 😂😂😂Sneak peak of this 12lb prime full packer brisket before resting in the cooler, I usually open up the peach paper for 5-10min to let it stop cooking before wrapping back up with the paper and then a towel. This brisket was done in 9 hours; the fastest I’ve done, temp was 225-260 the whole time so kind of scratching my head to why this usually takes 12-14hrs on a pellet smoker at the same temp.
