. When I heard their new pizza joint @pinkgorillapizzeria
had finally opened, I was pretty stoked about it. Seeing and smelling the pizzas go by made it really difficult to select a choice off of the menu, but I ended up going with the Double Bacon Cheddar Pizza. Cheese Sauce, Chopped Brisket, Bacon Bits, Cheddar, Tomato, Mayo, Ketchup, Mustard and Side Pickles. If you know me or keep track of my feed, you know I love a good burger and this was reminiscent of just that. First things first, I loved the nice pieces of chopped brisket and thick bacon loaded onto this pizza. Not only was the flavour meaty, slightly smoky, and incredibly delicious, but you can tell the meat itself had the same level of care and respect that they give at The Local Omnivore. The cheese sauce, mustard, ketchup and mayo are not typical pizza ingredients but they were simple and worked well to give it that creamy, sweet tang that is familiar on a classic burger. The tomatoes added some nice freshness and cut the meaty richness of the pizza overall. I was also a big fan of the pickles, which were thick cut and did not taste like the store bought generic variety. The crust was light, fluffy and crispy. One of the perks of ordering a pizza or calzone at the Pink Gorilla is you also get to choose one of their 14 homemade sauces, all of which are quite unique. Going with the meat theme of the pizza, I chose the Brisket Bolognese which was almost pure meat, with just the right amount of rich tomato sauce. I LOVED this and it was such a nice touch and compliment to the pizza. Given that I already had my share of beer prior to this, I opted to have their House Iced Tea which was nice and light, and sweet but not overly so. A great choice! I think a few people are going to be intimidated by the prices when they see the menu ($23 for a regular pizza), but considering the quality of the ingredients, the size of the pizza which was quite filling for me, and the fact that you get your choice of sauce on the side which undoubtedly is house made and good quality, I can’t complain. I will definitely come back.
