with this California Chicken Pita with Tzatziki recipe, courtesy @ca_avocados
. Savory chicken, creamy avocado, and crisp veggies come together for a delicious sandwich.
½ cup yogurt, non-fat
½ cup ﬁnely grated cucumber, ﬁnely grated
1 tablespoon fresh mint, chopped
1 clove garlic, minced
2 teaspoons lemon juice
Salt and pepper to taste
GRILLED CHICKEN PITA
1 lb. ground chicken breast
½ cup crumbled reduced-fat feta cheese (optional)
¼ cup red onion, minced
1 clove garlic, minced
1 teaspoon dried oregano
½ English cucumber sliced crosswise
1 avocado, ripe, seeded, peeled and sliced
1 cup grape tomatoes, halved
¼ cup red onion, thinly sliced
4 whole wheat pita bread
Salt and pepper to taste
1. Prepare the Tzatziki by combining all ingredients. Mix well and set aside.
2. In a large bowl, combine the chicken, crumbled feta (optional), minced red onion, minced garlic, oregano, salt, and pepper. Mix until well combined.
3. Divide the mixture into equal portions, shaping each into ½-inch thick burgers.
4. Heat a grill pan over medium-high heat. Spray the grill pan with cooking spray. Add the burgers to the pan, cook 3-4 minutes, ﬂip, and cook an additional 3-4 minutes until the burgers are cooked through completely.
5. Cut a strip oﬀ of each pita to create a pocket. Place one burger into each pita pocket.
6. Top each with cucumber, red onion, avocado, grape tomatoes. Drizzle each with Tzatziki, and serve!

I added a little vanilla extract & cinnamon to it! Seriously just so good and a little crispy on the outside but so moist and dense on the inside. SPAGHETTI AGLIO E OLIO
8 ounces spaghetti
6 tablespoons extra-virgin olive oil, divided
1 cup fresh French style breadcrumbs
Kosher salt and freshly ground black pepper
4 large cloves garlic, thinly sliced
1/4 teaspoon crushed red pepper flakes
1 cup freshly grated Parmesan, divided
2 tablespoons chopped fresh parsley leaves
In a large pot of boiling salted water, cook pasta according to package instructions; reserve 1 cup water and drain well.
Heat 2 tablespoons olive oil in a large skillet over medium heat. Add breadcrumbs and cook, stirring, until browned and toasted, about 3-5 minutes; season with salt and pepper, to taste. Set aside.
Heat remaining 4 tablespoons olive oil in the skillet. Add garlic and red pepper flakes, and cook, stirring frequently, until garlic is golden, about 2-3 minutes.
Add pasta, 3/4 cup Parmesan and 1/2 cup reserved pasta water. Cook, stirring constantly, and add remaining water as needed, 1 tablespoon at a time, until cheese has melted and desired consistency is reached.
Serve immediately with breadcrumbs, garnished with remaining Parmesan and parsley, if desired.

Golden temple also known as Sri harmandir sahib is the holiest shrine for Sikhs. People from all religion, caste and creed are welcomed here. One of the most fascinating thing about the golden temple is the langar or the community kitchen. It is operational 24*7 and serves devotees thronging the temple from near and far.
They serve around 1 lakh people every day which almost doubles during the harvest festival, Baisakhi.
Seva or selfless service is one of the basic tenets of sikhism and that is how the community kitchen at the golden temple is run, by volunteers.
Infact there are sevadars or volunteers all around the temple complex. Right from safekeeping your shoes to serving you water and tea, they do it all.
The first meal is taken to the sanctum to be blessed by the kirpan ( one of the five artivels of faith in Sikhism) and then it is mixed with the batch of cooked food to be served to the devotees.
People from all strata of the society sit down together on mats to have the langar meal.
Volunteers keep moving around refilling plates, ensuring everyone's eating to their heart's content.
Most of the raw material comes in the form of donations and rest is bought in bulk by the gurudwara committee.
A typical langar meal consists of rice, chapati, daal ,sabji and kheer. On festive occasions, additional special dishes like jalebis are served. The khara Prasad served at the temple is also prepared in the kitchen.
Hygiene is also of utmost importance so the utensils are cleaned thoroughly by another bunch of volunteers.
It is as much an operational marvel as an epitome of humility and equality.
