A pretty, easy salad that takes five minutes to make, but looks like a million! .
It's simple, fresh and so delicious.....super food.
Try it once and I can guarantee that it will become your go-to carrot salad recipe. .
When I initially created it, I started adding all sorts of vegetables with some walnuts. And then, I got an idea- I decided to throw few chopped dill leaves to my salad. Oh yes, you read that one right!
It turned out to be the one secret ingredient that totally made this salad.

7-8 carrots, peeled and sliced
1 tbsp extra virgin olive oil
1 tsp dried oregano
1 tsp red chilli flakes
1/2 tsp dried basil
Salt and pepper to taste
2 tbsp fresh dill leaves, chopped
Some dill leaves for garnishing
In a large pot, add water and some salt.
Let the water comes to a boil on a medium high heat.
Add carrots to the water and boil for 2-3 minutes.
Strain the carrots from the boiling water and place them in a bowl of cold water for another 2-3 minutes.
Take the carrots out and place them on a serving plate.
Whisk olive oil, basil, oregano, red chilli flakes, salt, pepper and dill leaves in a small bowl.
Pour the dressing over the carrots and keep in the refrigerator for 15-20 minutes.
Garnish with some dill leaves and serve chilled.
