Grandma Guyer’s Challah Recipe by Bernard Guyer, Adapted by Wendy Gorge, revised by Bernie Guyer and Marilyn Rice (11-3-2018). Ingredients: 3 cups all-purpose flour; 1 cup bread flour- high gluten; ⅓ cup granular sugar; 1½ teaspoon active dry (rapid) yeast; ¼ teaspoon sugar; 1-2 teaspoon water; 2 eggs, beaten; 1 egg yolk; 3 tablespoon Fleishman’s margarine (chop up); 1 tablespoon salt.
Steps: 1. Combine all-purpose flour, bread flour, and granular sugar. Mix in large bowl, or bowl of mixer. 2. Combine yeast, sugar, and water in small bowl. Wisk and let proof (~5 minutes) to foamy. 3. Combine eggs, Fleishman’s margarine, and the proofed yeast mixture. 4. Combine wet and dry ingredients and knead (5-10 minutes) by hand or mixer. Done when it “feels right” and/or comes off side of mixer bowl. 5. Add salt at this stage; mix into dough. 6. It should be soft but stretchy, not sticky. You may need to adjust the flour or water to get it to the right texture. Turn dough into oiled bowl (use oil spray); spray top. Let rise for 2+ hours, covered with cling wrap, nearly double in size. 7. When risen, turn out onto flour-dusted board. Makes 1 large or 2 small loaves. Cover with cling wrap while resting. Braid each loaf. 8. Break off small piece of dough and say the blessing; Baruch atah adonai, elohenu melach ha-olam. Asher kiddushanu b’mitvotav v’zivanu l’hafreesh challah. Leave to bake as offering. 9. Place braided loaves on parchment paper on baking trays. Cover with cling wrap lightly. Let rise again for about 30 minutes to 1 hour. Don’t over-rise! 10. Egg glaze: Take one egg yolk and add a few drops of cold water; stir until smooth. Brush the egg glaze on each loaf just before baking. Sprinkle top with sesame seeds, poppy seeds, and coarse salt to taste. 11. Bake at 350°F for 30 minutes on parchment paper on cookie sheet. Check near end to be sure that top is golden and bottom does not burn. Done when sounds hollow to percussion on bottom of loaf; if you have a thermometer, check for internal temp- 180°F. Cool on rack. Whole process takes ~5 hours!
