I have been resisting to open another bottle of this for a number of years. It is made with 80-100 year old Grenache vines. oohlala. ▪️
The first bottle I opened was, maybe six years ago? It was wow at first sight. Full frontal. But with depth. But I knew it was young. So I waited. ▪️
Been waited to open this for a while. And. Yeah. It’s still youngish. I remember the intense sweet dark fruits from that first bottle. But I don’t remember the volatile acidity. But boy, is the VA ever present. Nail polish!! Love it! Besides that was the full frontal assault of sweet sweet dark dark fruits (no I don’t have a mental condition that causes me to repeat words. But I do have a condition that makes me swear uncontrollably, but only at work. 😂😝) that attacks endlessly on the palate. It just doesn’t stop. Wow. I have to say the alcohol burn was there for a couple of hours. 15% will do that. But after a few (3.5 hrs to be exact) it was not attracting attention. ▪️
Final verdict: wow. Most enjoyable. A bit new world but with soft edges and depth. So let’s give the rest another 5 years or so before trying again. Goes pretty ok with the Sous vide Char Siu pork! Pork fat!!! And after a round of golf with @thegabrielma

Best lunch I’ve had all year! 😉
The left over pork fillet got dipped in a homemade Char Siu sauce overnight (soy sauce, hoisin, honey, brown sugar and Chinese five spice) cooked it up this morning while sorting out breakfast sodas on the other side of the grill!
Tasted incredible - kids ate most of it as I was slicing it!
Some red food colouring next time might be needed for that distinctive colour!
