Formaggio eroico per eccellenza è il #Bettelmatt
. Lo si produce solo in estate (tra luglio e agosto) negli alpeggi dell’alta Val Formazza, nell’Ossola superiore, e della Valle Antigorio, oltre i 2.000 metri di quota. Siamo nel Verbano Cusio Ossola, per l’appunto, per raccontare di una toma di cui si aveva notizia fin dall’anno Mille ma che è stato ritrovata soltanto negli ultimi anni del XX secolo. La produzione è cominciata per l’appunto nell’alpeggio Bettelmatt, allargandosi ad Alpe Forno, Kastel, Lago Vannino, Poiala, Sangiatto, Toggia. E’ un formaggio di colore paglierino, con pasta compatta e occhiatura variabile. Viene prodotto con latte vaccino intero crudo di razza Bruna italiana, con una stagionatura di almeno due mesi. E’ reso straordinario dai pascoli dove si nutrono le mucche, con il sentore di erbe e fiori. Soprattutto dell’erba mutellina, tipica di queste montagne. Il Bettelmatt è un formaggio per chi ama le sensazioni intense, da consumare con il miele o con il tipico pane nero di segale. La produzione è limitata, così il grande successo ha richiesto di marchiare a fuoco le forme per evitare imitazioni di basso profilo.

Fruit: it’s one of the easiest, most economical cheese pairings out there. Everyone’s a fan of apples and cheddar, but there are so many more fruit + cheese pairings that make a perfect snack, quick and easy cheese plate, or 5-minute meal.
Salty, funky blue cheese loves the earthy sweetness of ripe pears. Fruity Mimolette or butterscotch-y aged Goudas shine with a slice of juicy peach. Nutty, crumbly Pecorinos are a perfect match for tangy stone fruit, like plums or cherries. And tart, crunchy pomegranates (like this New Mexico-grown beauty from @squashblossomlocalfood
) are the perfect balance for rich, creamy triple creams or tart, fluffy young chèvres.

I've had people tell me that I can't or shouldn't eat fruit (other than olives, tomatoes, or avocados) on keto -- because it spikes insulin, because it puts you out of ketosis, because fruit has sugar, because it triggers carb cravings, whatever.
IMO, it depends on YOUR body & what your goals are -- losing weight, healing your metabolism, fighting disease, etc.
Eating a serving of berries here and there doesn't spike my BGs sky-high or put me out of ketosis (I've checked), doesn't make me crave carbs, & I've been able to lose 40 lbs in a year, so I'm not sweating it.
But if that's not true for you, then don't do it, simple as that! None of us are the same. Listen to your body and do what works for you 💜
