As the cold of winter gathers pace, Japanese turn to one particular vegetable to warm themselves. Hakusai #白菜 is also known as Chinese or Napa cabbage depending on where you are from. In Japan nabe (hot-pots) is the dish found on most dinner tables from late autumn. It is roughly the equivalent of an interactive pot au feu. Rather than cooking everything together at once - ingredients like leek, mushroom and pork are added and eaten in waves. Towards the end of the meal the liquid increases in umami (flavor) to become a flavorful broth. To finish udon or rice may be added to the liquid depending on the region or preference. Hakusai in nabe makes for a tasty and healthy meal that warms the body on cold winter nights.
