Matchai make this pudding a breeze as it is perfectly pre-seasoned with turmeric, ginger, coconut sugar, and a bunch of other spices that warm this sometimes chilly dish right up. And yes, there is pepper it there, black and cayenne. Plus the company is local, based in Rhode Island, so of course I love that too!! •
Matchai Chia Pudding
- 1/3 Cup Chia Seeds
- 1 and 2/3 Cups Hemp Milk
- 1 Tablespoon Jahmu Matchai
- 1 Tablespoon Maple Syrup
- 1 Teaspoon Vanilla
- 1 to 2 Small Scoops Stevia Powder (I like mine sweet but you can omit if you prefer)
Combine all ingredients throughly and separate into two containers. Let sit out for at least one hour. •
- 2 Tablespoons Coconut Powder
- 1 Tablespoon Freeze Dried Raspberries
- 1/2 Teaspoon Chaga
Toast the Coconut over medium low heat until light brown, about five minutes. After removing from the heat, mix in the Chaga and Freeze Dried Raspberries. Crush the Raspberries to form a pretty powder. Sprinkle over the two puddings and serve! •

I'm always making healthy treat because I know my weakness and it's better I plan a head. Made these last week on my first live and I was just making a snack as usual, and they've come through for me all week, the warm chunky peanut butter was a good idea and I only tried this on the last ones. Anyway now I know.
So I don't have a name as it's still a recipe in testing but will leave the ingredients and you know I'm obsessed with chia seeds, so I'm making so many recipes with them.

I am obsessed with chia seeds, and I cannot lie! And I am not referring to the 80-90's craze of the chia pet (cha-cha-cha-chia). Chia seeds are a wonderful "superfood," because they're relatively denser in nutrients compared to other foods. These seeds have around 140 calories per two tablespoons, along with a healthy dose of omega-3 fatty acids, fiber, and protein. They also contain all nine essential amino acids, which are the muscle-building protein building blocks our bodies need but don't produce naturally. We have to get them through our food.

My sister made these awesome coconut-chia parfaits for busy mornings. You just put all the dry ingredients in the night before and keep refrigerated if using fresh fruit. Then before you leave, we put coconut milk (higher fat content) in and mix it around, in 10-20 minutes the chia will start binding and thickening and you have yourself some chia pudding! I added a splash of chocolate almond milk which made things interesting. You just need some chia seeds, granola, and whatever else you like on “yogurt” . If you have any supplemental powders those can be added too. (that’s a plastic spoon I wash and reuse)
Also, don’t eat and drive!

Cook your berries in a small saucepan over medium heat. When they begin to breakdown, stir in the lemon juice and sweetener. Mash it down with a fork or leave it chunky - whatever you prefer! Cook for about 5 minutes then remove from heat and stir in the chia seeds. Let cool to room temp and then pour in an airtight container or jar. ENJOY!
