Does anyone really still use Pinterest? My overall usage has gone WAY down, but as I was perusing the site for work last week, an ad (likely targeted) popped up from @WholeFoods urging me to ‘Feed My Resolution’ with a delightful looking Vegetarian Power Salad. Anyone else see that sucker popup? No? Just me? It caught my eye because I’m on this whole #WeekdayVegetarian thing (which is going pretty well, thankyouverymuch) and the big “VEGETARIAN” across the top caught my eye. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Like, the whole thing is something I’d probably make anyway - I think I’ve cooked/eaten sweet potatoes in some capacity the majority of the last month, so this was a given. Roasted mushrooms, tricolor quinoa, broccoli and greens rounded this out. The only thing that caught me off guard was the addition of the blueberries. And then, like, what kind of dressing do I use here? (SPOILER ALERT: I went with the Green Goddess from TJ’s) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I hopped over to my fave @TraderJoes (sorry WF - it’s just closer and it’s been cold AF in Chicago! If I can avoid the extra mile walking outside, I’m INTO IT.) on Monday, in the fresh 4 inches of snow that fell and filled up my cart with all the goodies to throw this together. I was so excited to eat this that I even dug in on Monday night after prepping all 4 servings… leaving me with 3 for the rest of it for my lunches this week. Done and done. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ The best part? Victoria: Funny story, when I first met my boyfriend I told him I knew how to cook. I did not. Turns out he was really into cooking, but for real! I had to learn quickly to keep the charade going. I failed, a lot. I have come to appreciate all the effort and thought that goes into creating a dish, home cooked or restaurant meals alike. . What's your favorite style to cook and why? . Victoria: My favorite style of cooking has recently changed to sous vide cooking. I’m a huge fan. If you’ve ever over cooked a steak or served dry pork chops get a sous vide, it will never happen again. . Q: What do you think about when you’re in the kitchen? . Victoria: I think about presentation a lot and portions a lot. I also find it very satisfying when you can make something as simple as oatmeal into cuisine. I believe the economic law of diminishing returns applies to food as well. One note meals can start out great but 12 bites in and you’re bored. . I also think about how I can add bacon to every recipe. . Q: Anything else we should know about you and your cooking? . Victoria: No one likes to be a guinea pig. I learned years ago that you should never try a new recipe on guests. Everything I cook for someone else is a recipe I’ve made many times so that I’m confident it will turn out the way I expect it. . . Holy COCONUT!! Tons of chocolate, heavy coconut, and an all-around sweetness honestly makes this thing like a liquid Mounds bar. There's just a bit of a bitter nip on the back end to help balance it all out, but it tastes a lot like a Mounds Dark. Good stuff. Prost! @PollyannaBrewCo

Honey-roasted duck over rice and Ryuu "udon" (banh canh trang bang) from @ryuuasianbbq1 in Logan Square, Chicago --- Surprised to like food from a pan-Asian (I think they're Korean, Japanese, and Vietnamese?) place this much. The duck rice was decent but that banh canh was excellent.
