Last night's high protein, low fat dinner: Chicken Zoodles. Makes 2 large servings (I'm loving the high volume eats recently haha)
542 calories, 57.6g protein, 38.3g carbs, 16.5g fat .
-1lb package boneless skinless chicken breast
-4 small zucchini, spiralized -1/2 package grape tomatoes (I used heirloom medley) -1 package sliced mushrooms -balsamic vinegar
-italian seasoning -onion salt
-cracked black pepper
-basil pesto -olive oil .
Cube chicken into bite sized pieces and marinate both the chicken and the mushrooms in balsamic with Italian seasoning. Spiralize zucchini (or buy pre packaged). Slice tomatoes in half. Lightly coat pan with olive oil and cook chicken mixture until it's no longer pink. Add tomatoes, salt/pepper, and pesto. Add zoodles last and toss until coated in the sauce (3-4 min). Serve immediately and enjoy!! .
