Here we've got a bucket of chunks for grind, turning into andouille and chorizo for Block and the tap room and a tub of bones for pork jelly, head cheese and soups.
Since I've become one of the main people breaking them down I don't get as many pictures as I used to.
This is one of the very unique things we do at my job every year and I kinda love it. Especially since this year and last I had a burlesque show a day or two before and I love laughing at the dichotomy of my life.
