✨WHITE BEAN CHOWDER RECIPE✨
You may have tried clam chowder or corn chowder, but you haven’t truly lived until you’ve had white bean chowder. 😋
Okay, that may be a bit dramatic...but white beans like great northern beans, cannellini beans and navy beans are bursting with nutrition including plant-based protein, fiber, disease-fighting antioxidants and magnesium. ——
I am literally licking my chops as I’m typing this, because I just finished a cup of this delicious chowder. I tossed all the ingredients into my slow cooker this morning (I used my Instant Pot on the “slow cook” setting), so my boo and I had a nice hot dinner ready and waiting on this chilly evening. ——
✅ 4 large organic potatoes, peeled & chopped ✅ 4 organic celery stalks, finely chopped ✅ 3 large organic carrots, peeled & chopped ✅ 1 large organic yellow onion, diced ✅ 2 cups of organic low-sodium vegetable broth ✅ 15-ounce can of organic white beans (great northern, cannellini, navy, white kidney) ✅ 13.5-ounce can of organic coconut milk (Native Forest is my favorite brand.) ✅ 1 teaspoon of organic garlic powder ✅ Himalayan pink salt and organic black pepper to taste (Feel free to add other organic spices like cumin and thyme.)
HOW TO MAKE IT:
1️⃣ Put all the ingredients in a slow cooker and cook on low for 8 hours or high for 5 hours, until all the veggies are tender.
2️⃣ Use a potato masher to roughly mash the ingredients, making the chowder a creamy consistency with chunky bits. Taste and add additional seasoning if necessary.
3️⃣ Garnish with fresh toppings like diced tomatoes, sliced green onions or parsley...or simply enjoy as is like I did. YUM!!!

It was the most frustrating thing ever not being able to do any horizontal or vertical pushing for 8 weeks 🤐
However as of today, I'm slowly ramping up my pressing volume again woohoo 🏃
I've always loved working my chest/shoulders (what guy doesn't 🤷🏼♀️) so it was fun to finally get some pressing involved in today's session.
I also included a new movement - the cable lying lateral raise 🙋 I posted this on my story and it's a great way to really isolate the side of your shoulder.
When it comes to exercises like these, it should never be about using stupidly heavy loads. The main point of including this is to work the lateral head of the shoulder and that area ONLY.
If you're trying this one out, you can use a bench or a step to prop yourself up. You're then focusing on driving through your elbow, and keeping your shoulders pinned back 😎

🌶 SPICY TOFU 🌶
Truly fancy, delicious, restaurant style, vegan dish in 10 minutes. This is a recipe which will come to your rescue when you haven’t planned a meal on a week day.
Add in as many as veggies as you want and you’ll have yourself a perfectly balanced healthy dish 💪🏽
▪️1 block extra firm tofu, cubed @tofooco
▪️1 red pepper
▪️½ small onion, chopped
▪️⅓ teaspoon turmeric
▪️¼ teaspoon chili powder
▪️1 teaspoon coriander powder
▪️1 teaspoon cumin powder
▪️1 teaspoon garam masala
▪️1 clove garlic, minced
▪️1 plum tomato, chopped
▪️salt to taste
▪️Heat 2 tablespoons oil in a non stick fry pan under medium heat.
▪️Throw in tofu and fry until sides are lightly browned and skin is starting to get more firm on outside ~ 25 minutes.
▪️Set aside the cooked tofu.
▪️Add in the chopped onion and fry until translucent.
▪️Mix in the chopped garlic and fry for 30 seconds.
▪️Mix in turmeric, chili powder, coriander, cumin powder and garam masala and fry for a few seconds until fragrant.
▪️Mix in the tomato and pepper and fry for 2 minutes.
▪️Add back the tofu to the pan and fry for another 5 minutes or until tofu is completely coated with the curried tomato mixture.
▪️Top with coriander and spring onions

I’m on the run today! Full book of appointments and no time to cook! On days like this Overnight Oats are the way to go! I made them last night, topped them this morning and ran out the door. Once I get settled at work I just pop them in the microwave for 3-4 minutes and enjoy! As complicated as they may seem Overnight Oats are SO EASY! You can follow my recipe if you want or you can make any creation of your own! I never make them the same! The base of overnight oats is only Rolled Oats, & Almond Milk. Yes. It’s that easy! Just add your choice of ingredients to come up with endless flavor creations 😍
Apple Pie Overnight Oats 🍎 🥧

Gluten Free Rolled Oats
Spoonful of Local Apple Butter
1/2 a Freah picked Granny Smith Apple chopped!

Here’s what you need
1 teaspoon coconut oil
1 large shallot, sliced
1 tablespoon fresh garlic, minced
1 tablespoon fresh ginger, peeled and minced
1 tablespoon lemongrass, minced
4 cups broth (chicken or vegetable)
2 cans (13.66oz) coconut milk, unsweetened and full fat
¼ cup fish sauce
2 tablespoons lime juice
⅛ teaspoon Liquid Stevia
½ pound large shrimp, peeled and deveined
1 thai chili, thinly sliced into rings with seeds
1 cucumber, halved lengthwise, seeded and sliced into half moons

My family has experienced a compelling example of hope and gratitude out of one of these horrible tragedies (that we have all been through before). My sister @lisalong62_
clung to life horribly injured by being trapped in the Agoura fires of 1978. Ultimately she ended up in a head on collision in an attempt to escape the flames and thrown through the front windshield of the car she was in.... She should not have survived ..... but she did.. after flat-lining more than one time. She wears the memories of that horrible yet miraculous time across her beautiful face. Each scar spelling the words Miracle, Strength, Hope , Resilience and Love. This world would NOT have been the same if not for some unknown (🙏🏻known) crazy reason she survived ... So when I say these words I say them from first hand knowledge ... Through the ashes , up will sprout ... Hope, gratitude, beauty (even with scars as reminders) . I am so incredibly moved by the unity I am watching take place . Again I sit here filled with so much love, support for all of you dealing with being (where My family once was ) neck deep in tragedy... I find myself feeling so helpless. I am hoping maybe I can offer just a small amount of comfort by sharing this with all of you...🙏🏻 please always remember.... the Oak’s (OUR) roots run deep. ❤️😥🙏🏻 #homesweethome
