🍁🧣🧦! Made this awesome soup🍲 from scratch, it turned out so amazing I had to write down the recipe! Super nutrient dense, creamy, warming and comforting!
Creamy Root Veggie Supper Soup!
1 medium butternut squash (peeled, seeded and diced!
4 medium leek (white only, diced)
3 large oriental yams (skin on, diced)
1 yellow onion (minced)
2 cloves garlic (minced)
2 tbsp EVOO
8 cups bone broth (homemade is best!)
1 tsp salt (or to taste)
1 tsp fresh ground pepper
1 tsp dried parsley
1/2 can coconut milk
2 tbsp nutritional yeast
Sautée onions and garlic in EVOO in a large stock pot. Add broth and root veggies. Simmer for about 30 mins or until everything is cooked. Blend until smooth (I used an immersion blender!) Add all the rest of the ingredients, stir and enjoy!!!
Hi! I made a Thai chicken soup with zoodles;)...at least it seems like it is Thai but I sort of winged it, lol. I cooked 3 chicken breast in the crock pot on low for about 4.5 hours. It was filled about 1/3 of the way up with chicken bone broth/stock from a whole chicken I cooked a few days ago (also in the crockpot;)). I added cumin, curry powder, 3 garlic cloves, s&p, slices red pepper, turmeric, red pepper flakes, and a little Garam masala spice (to cook in broth with chicken). After the 4.5 hours, I shredded the chicken with a fork and added 1 can of full fat organic coconut milk, a few fresh basil leaves, squeezed juice from 1 large lime, and 2 spiralized zucchinis.
