Been slightly disappointed by the lack of Gluten Free food at my university especially in the main cafe area.
Today all I could have was the Sweet chilli chicken leg and some salad from the salad section. 😭 Not at all filling especially as I’m playing hockey later so I need the energy!
I always have to ask as well as nothing states GF on it, they have a couple of Mrs Crimble’s snacks but that’s it.
On the second picture I had quite a nice meal which was a lot more fulfilling than today’s! However as the Pippa dons weren’t gluten free I had broccoli instead 🙃
I’ve written on their feedback forms that they really should think about this so hopefully it’ll start to improve especially as I ask them every time I go in!

VEGGIE RICE & BEAN CASSEROLE with KNORR ORGANIC LIQUID STOCK. I love this quick and tasty recipe using organic veggies. The NEW gluten free Knorr organic liquid stock range is perfect as it tastes delicious and is so quick and easy to use. I’ve always loved using Knorr stock in my cooking – not only is it gluten free and free from artificial preservatives & colours, the new organic option comes in a handy ready-to-use pouch.

1 cup Knorr Organic Vegetable Liquid Stock pouch
1 onion, diced
1 pepper, chopped
3 garlic cloves, minced
1 tablespoon oil, for frying
2 cups cooked rice (I use pouches)
1 can black beans, drained
1 can sweetcorn
2 tbsp tomato paste
Salt & pepper
1 tbsp cumin
1 cup cheddar cheese
Preheat oven to 180C.
Saute onions, pepper and garlic 4-5 mins until soft, remove from heat.
In a large mixing bowl, add Knorr Vegetable Stock, cooked peppers/onion/garlic, rice, beans, corn, tomato paste, salt and pepper, and cumin. Gently mix together. Fold in cheddar cheese. You can really add whatever veg etc you have in the fridge and measurements can easily vary.
Put into a baking dish and put in oven for around 25 mins.
Remove from oven. Nice served with an egg on top and hot sauce.

was gluten free, off I went! This was delicious and it always feels better to eat something which normally isn’t gluten free, am I right!? They have gluten free soy sauce and pickled ginger behind the counter for their sushi as well! Has anyone tried them? 💛 #theglutenfreeblogger
CURRY SIN GLUTEN🤩!!🏆
Como os prometí ayer, aqui os traigo la receta del POLLO AL CURRY que preparé ayer para comer. Llevaba bastantes meses sin preparar este plato porque no localizaba ningún curry sin gluten, hasta que me topé con @1001especiasweb
. Esta receta es muy adaptable al gusto de cada uno pero yo os voy a dejar cómo me gusta prepararla a mi, como siempre, SIN GLUTEN Y SIN LACTOSA✌🏼
- 5 Contramuslos de pollo sin piel deshuesados y cortados en trozos.
- leche evaporada Sin lactosa 250/300 ml (a ojo)
- 1 cucharadita de postre de curry
- Arroz basmati/largo
- 1/2 cebolla
- Aceite de oliva
Paso a paso👩🏻🍳:
1️⃣Cortamos la cebolla en juliana y pochamos a fuego bajo con sal (la sal ayuda a que suelte su jugo). Cuando esté bien pochada añadimos los champiñones y dejamos a fuego medio durante 10 minutos para que suelten el agua y reduzca el caldito que se forme. 2️⃣Retiramos cebolla y champiñones a un plato y reservamos para luego.3️⃣Cocinamos el pollo previamente cortado en trozos (añadimos sal) hasta que cambie de color. 4️⃣Cuando haya cambiado de color reincorporamos la cebolla y los champiñones, movemos.5️⃣Añadimos la leche evaporada y la cucharada de curry (si nos gusta mas fuerte podemos añadir más) y rectificar de sal. 6️⃣Dejamos cocinar a fuego medio moviendo de vez en cuando durante 10 minutos para que reduzca y espese la salsa. 7️⃣Cocemos el arroz (añadimos sal), colamos y reservamos. 8️⃣Montamos el plato a nuestro gusto y a disfrutar.🤩 🔴OJO!! Si tienes intolerancia a la PLV puedes sustituir la leche evaporada por crema de coco (corte ingles zona gourmet: marca Desiam o zona supermercado en la parte de cocina mexicana: marga Goya)🔴

Last night we made some turkey and bacon burgers in lettuce boats, topped with avocado 🥑 I love making homemade burgers as I can make sure they are 100% low FODMAP and gluten free. These also have a more reduced fat content in than standard beef burgers. The lettuce boats add in extra vegetables to my diet too.
Tonight’s dinner | Spicy veg sausage with brown rice penne and bean mix
Zucchini and Corn fritters with poached eggs, tomato relish, bacon, feta and wild rocket.
Remember when you had to think about what you wanted to do with your adult life as a high schooler? The older I get the more I feel like high schoolers are so ill equipped to make that kind of decision. I changed majors in my first year of college and my career for the last 16 years has been only marginally connected to the major I finished college with. 🤔
I remember taking interest surveys, asking others for feedback, and doing job shadows trying to find the right path. The one consistent thing I wanted was to be able to help people. I stumbled in to my HR career following the desire to help people. 🤔
One of the reasons I love being a health and fitness coach is that I truly get to help people. My HR job does not always feel like I'm helping people when I'm focused on discipline consulting and investigations of concerns. The time I spend coaching, that fills my servant cup! 🥛

Interrupting the regularly scheduled road trip recap to bask in the memory of the lovely little picnic my husband and I had on Peacock Island yesterday for our anniversary. I made fried chicken (soaked overnight in buttermilk and spices before flouring and frying it up) and my husband made his kick-ass potato salad, together we polished off a bottle of Sekt from our favorite winery in the Rheingau where we used to live. 🤔😆 Ça se dit ? C'est bien de varier les légumes avec cette purée mais à consommer avec modération ! Il faut previligier les légumes verts ! Pour les autres, c'est du plaisir en purée 😉
