You all are probably tired of my #csechallenge
non scale victories, but there have been so many wonderful things to celebrate from this challenge! @cleansimpleeats
designed and supported a program that made a huge difference to me in so many ways besides losing weight/inches.
My two biggest victories from the past six weeks were finding my voice to share my authentic journey, and doing something that made me happy.
This will be my last official post for the fall CSE Challenge since today is the last day of the challenge. The winter challenge will start in December, but you can buy the cookbooks any time. Let me know if you want to learn more!

Happy National Pumpkin Cheesecake Day everyone! I hope you’re all celebrating with a big slice of cheesecake today! I know I’ll be digging into this guy very, very soon! This is recipe, because when it comes to desserts, Paula seems like a gal who knows what she’s doing... This is one of my favorite desserts to make this season & it always makes an appearance on my thanksgiving table! Just give me a plate & some whipped cream & I’m all set! 🎃🥧

I remember growing up watching Popeye eat cans of spinach and instantly growing big muscles. 💪 That still didn’t get me to want to eat spinach. 😐I guess back then I was a little stubborn. I don’t know when, but as I grew older I eventually began to like spinach. Aside from just sauteing it with some garlic, olive oil, and soy sauce or making a goma-ae out of it, this spinach ohitashi is one of my favorite ways to eat spinach! This side dish is very light and can be served warm or cold. It’s a great way to add more greens to your diet! have you had spinach like this before? 🙃 lmk in the comments!
