Grilled Mushroom Tacos
Grilled white mushrooms, onions and red bell peppers with pickled cabbage and jalapeño-corn salad on toasted corn tortillas

! Thank you to everyone who participated in my contest. Jen wanted to learn how to make my corn salad or esquites. This is one of my favorite side dishes, especially in the summer when our local corn is in season. You can substitute canned corn, but I highly recommend using fresh corn on the cob.
•3 ears of corn, husked •1/2 cup mayo
•1/4 tsp adobo sauce •1/2 tsp smoked paprika •1/4 tsp salt
•1/4 tsp chili powder
•1/4 tsp granulated garlic
•1/2 a lime, juiced
•1 tbsp cilantro, chopped
•1/4 cup cotija cheese *Rub a little olive oil or butter on the corn husk and cook on a bbq or broil until charred. Using a sharp knife, cut the corn off of the cob. While corn is cooking, mix mayonnaise, adobo, spices and lime juice together. In a bowl, combine corn kernels, mayo mixture, cilantro and cheese. Mix thoroughly and top with a little extra cilantro and cotija.* Enjoy! #chopitlikeitshot

3 tablespoons fresh lime juice
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons olive oil
4 cups fresh corn kernels
1 cup thinly sliced radishes
1 cup cherry tomato halves
1/3 cup crumbled Cotija cheese
Close up of some Summer Salads I made this week. Summer is the best time to throw things together on a platter and get away from the heat of cooking. All the ingredients in both of these salads are in season, so you know they taste good. Throw on some fresh herbs, olive oil and salt and you’ve got an easy winner. Tomato, Peach, Burrata Salad
1 handful arugula
2 heirloom tomatoes, cubed
2 ripe peaches
1 red onion, sliced
A couple slices of prosciutto
Red Wine, Rice or Apple Cider Vinegar
1 clove Garlic
Basil, Scallions, Mint
1. Cut the peaches in half and grill for a couple of minutes on both sides. Do not over grill or you will melt the peaches
2. Marinate the red onions in 2 tbsn of the vinaigrette and 2 tbsn of the vinegar. Add a 1/2 tspn of salt. Let marinate for at least 10 minutes, until the onions release their juices
3. Get ready to plate: grab a big platter and place the arugula around the edges and spoon over some lemon and olive oil and salt on the leaves.
4. Toss the tomatoes with the fresh garlic and olive oil and place around the platter.
5. Cut the peaches into cubes and toss with a tablespoon of the vinaigrette. Arrange on platter.
6. Arrange the prosciutto in pieces on the platter.
7. Cut the burrata in cubes and arrange on top of the tomatoes and peaches.
8. Sprinkle the red onions all over and pour the rest of the juices all over the platter.
9. Throw on some basil, mint and scallions and you’re done! You can serve it at room temperature!
Easy corn salsa/salad 😍 it’s a family fave for our taco nights. Slice the corn right off the cob(uncooked), add a diced small red onion, a handful of chopped cilantro, and juice from 2 limes. If you like heat roast a poblano pepper and add that too (diced) 🙌🏻 it’s sooo good and better than chipotle! • Avocado & Corn Salad
3-4 ears of corn, shucked and corn kernels removed
1 red onion, chopped
1 cucumber, peeled and chopped
3-4 Roma Tomatoes, chopped
1 cups bell peppers, chopped (any color)
2 jalapeños, halved, seeds removed and diced
3-4 avocados, chopped
2 limes, juices
1/3 cup fresh cilantro, chopped
1/4 cup olive oil
Salt and pepper
Combine all ingredients in a large bowl, mix well and serve. Enjoy!
Are you asking if I made this? YES, and the best part is that anyone can do it (see below how). For a few weeks now I've been craving salmon steak, yeah a big one. and here is the result of my cravings, really if it wasn't because my husband is at home. I've eaten his piece too.
Cajun baked salmon (cajun seasoning I made my own with not salt) I mixed the seasoning with a little olive oil and salt, then used a silicon brush to marinate the salmon, pre-heat the oven at 350F used a grill pan, when the oven was ready I baked it until the skin was crispy.
For the corn salad, corn (grilled or from a can) cherry tomatoes, avocado, cilantro, chile lime from trader joes, olive oil and lemon juice. mix everything and you are done.
Deets: put the salmon on top the baby arugula, on the other side put the corn salad, sprinkle the salad with red pepper flakes and ready for the pic.
Updating.. My daughter scores are amazing, she is perfectly normal for her age. Such a great relive.

happy wednesday lovies 🤗 I had an appointment with my GI doctor today & because I’ve been feeling very frustrated with my symptoms lately, seeing her was exactly what I needed. she reassured me that she didn’t think I needed to go on antibiotics 👏🏻, I didn’t need to restrict my diet 👏🏻👏🏻, and I didn’t need to stress about it 👏🏻👏🏻👏🏻. instead she told me to listen to my body and if that means taking an extra dose of one of my meds, or practice more self love and relaxation, then so be it. I’m also going try some @1stphorm
greens and incorporate more walking & yoga into my daily routine. gotta love #SIBO
