Breakfast for Dinner?
Bok choy’s not for breakfast! But it’s breakfast for dinner so it’s fine.
Bok choy sliced thin and sautéed with brown rice. When the rice is warm and the bok choy is completely wilted slide on to a plate. Drizzle about 1 teaspoon soy sauce on it. Then fry up two eggs crispy. Top that with sriacha and chopped peanuts.
The flavors are like the Crack Sauce I made for the Sheet Pan Chicken and Broccoli but deconstructed (and easier).
Is there anything better than baked eggs? The answer is sometimes: if the eggs are fried, poached or scrambled, but otherwise no. 😝😋
HAPPY EASTER!!!! 🙈 (I know... I’m late.) 🐣Yesterday was soooo much fun!!!! We had family and some friends over to celebrate with us. We started off with an Easter egg hunt for the kiddos. Then we had an adult Easter egg hunt. 😏We have a family tradition of filling hollow eggs with confetti and cracking them on each other’s heads. We’re softies and we’ll cracks the eggs in our hands and let the mess fall on our victims head. 😂 Since yesterday was ALSO April Fools - my mom decided to put flour in some of the eggs 😂😂 We each got flour in our coats, hair, and other uncomfortable places 😜 haha!! It was a blast! I love these fun-filled memories. ♥️ — oh, and my shoes!!! 😂😂😂 the house shoes I never changed out of. 😂😂👏🏼👏🏼👏🏼 lets just say, I was SUPER comfy 🙌🏼
