I have been wanting to make some high protein vegetarian meals for Darren seeing as he is working extra hard not only at work during the day but at crossfit 3 times a week. But it is hard to make sure he is getting enough protein and calories per day , so I was stoked to come across @avantgardevegan
, he did a full video on meal prepping high protein vegan meals.... so I made everything yesterday afternoon. I halved the portion size for my meals , first meal is falafel with herb and lemon quinoa , handful of spinach , topped with red cabbage and cherry tomatoes - verdict? Friggen amazing 😍 looking forward to dinner tonight!
