Two chicken #recipes . My new favorite vegetable is celery and I’ve been eating it plain and incorporating it into every stir fry dish! Just hiding it in there to add more veggies to my fiancé’s diet. Haha. 👩🏻‍🍳 1. Marinaded chicken with veggies, cooked spinach, and white rice • Marinade cut chicken with 1/4 cup sugar, 1/4 cup oil, 1/8 cup soy sauce, 1/8 cup vinegar. Marinade in fridge 30 minutes to overnight • In a skillet, cook garlic, chili, onion and chicken until cooked through and the sugar caramelizes. (I always don’t cook it long enough, but it definitely tastes better when you wait!) • I added these veggies: diced celery, broccoli, carrot • Serve with white rice, cooked spinach, cilantro and green onions 2. Made these toasted seeds and oats bar for my weekly snacking needs. • Ingredients: sunflower seeds, pumpkin seeds, pine nuts, chia seeds, sesame seeds, sliced almonds. Lightly toast seeds 350 degree oven for 8 minutes. • melt honey, brown sugar and mix together. Add a bit of sea salt and vanilla extract. An easy no-bake, gluten free and (healthy?) snack for the long weekday! Peanut butter granola bars. #recipe : 1. Stir together 1 1/2 cups of oats with 1 1/2 cups of rice cereal 2. In a saucepan over medium heat, melt 3 tbsp unsalted butter, 1/2 cup honey, 3/4 cup peanut butter. Mix together until smooth, 3-5 minutes. Let cool for 1 minutes 3. Pour peanut butter mix over oats and cereal. Mix together. 4. In a baking pan or sheet lined with parchment paper, press the mix. Press 1/2 cup of chocolate chips on top. 5. Last Friday my friend and I made homemade pizza. I made the pizza dough the night before and let it rise. I used Bigger Bolder Baking’s pizza dough recipe. A few things I learned to improve the taste: 1. Let rise in a big Tupperware container; seals air off better 2. Let rise for 18-20 hours in room temperature; refrigerate for 5 days 3. Stretch dough so the pizza is thinner and larger 4. Bake dough without topping first. 5-10 minutes 5. Add toppings and bake for 10-30 minutes. I think my best green curry yet! I’ve gotten good reviews from my friends and peers and I’m super happy 😊 So easy to make and customizable to your favorite protein and vegetables. I also added pictures of staple ingredients of this dish (in case you’re trying to find it at the market) Ingredients and simple directions: 1. Oil, tofu and green curry paste. Fry until tofu is browned. 2. Add cut potatoes and carrots. Add water and simmer in water until potatoes are soft and can be easily speared with a fork. 3. Add Thai eggplant, sugar snap peas, colorful bell peppers, onion and bamboo shoots. Fry for a bit. 4. Add one can coconut milk and a bit of water. When boiled, add bean sprouts and kaffir lime leaves 5. Simmer until vegetables are soft. Add basil, sugar, fish sauce, red chili flakes (to taste preferences). 6. I added the frozen tilapia last so it won’t be over cooked when ready to eat. Once tilapia is thawed in the broth, it’s ready to eat! 7. Garnish with chopped green onions, cilantro, fresh basil and dried red chili. Stir in a dash of salt and 2 cups coconut flakes 3. Form into balls and refrigerate for 30 minutes 4. Melt 1/2 cup of chocolate chips in microwave. 5. Take peanut butter and coconut flakes out of fridge and roll into a ball with your palms, dip in melted chocolate 6. Spring break no kitchen challenge #4 : tuna salad salad. 🥗 There’s so many things I can make that doesn’t require heat; all it takes is a little creativity and google searches. 🍴 the greater challenge is buying ingredients I can use up in a week, on a budget. So no bulk items, soy sauce bottles, oil, vinegar, etc. The items also have to be able to appear in more than one recipe. This is vegetarian green curry with potatoes, Thai eggplant, bamboo shoots, and that roasted squash I made the other day! Yum! 🍚 Ingredients/ recipe: • cook white rice • over hot pan, put dried red chili over heat until it puffs up. Remove and set aside. • over hot oil, put 2-3 tbsp green curry paste. • pro tip: if using potatoes, I would boil it in a bit of water until it’s soft before adding to the mix. They take a long time to get soft. • add your choice of meat (if non vegetarian) or tofu • add your favorite vegetables (carrots, potatoes, baby corn, bell peppers, squash, etc) • add Thai eggplant • add baby Thai eggplant (my favorite! I haven’t been able to find it in Baltimore!) • add 1 can coconut milk and a bit of water • when the milk boils, bring to low heat and simmer until the vegetables are soft • add kaffir lime leaves, basil, fish sauce, and sugar. I made a Thai dish called Pad Kee Mao, also known as Drunken noodles. This spicy dish is supposed to help cure hangovers, eaten after a crazy night out. I don’t drink; I was just craving a spicy taste of home and exhausted from the long week! My food philosophy: if it’s not spicy and burning your tongue, you’re not doing it right. Put cut potatoes into cold oil and put on high heat. Bring the oil to bubbling, then you can lower the heat. It took me about 40 minutes for my fries to brown and crisp up. 3. Drain fries.
