Fall calls for warm, spicy and welcoming butternut squash soup. Super easy and fast to make and oh so delicious!
I roasted the butternut squash in the oven first, had previously made chicken stock, then just blended squash and stock together adding ginger, curry powder, salt and pepper.
For the topping I caramelized sweet onions with some olive oil, added chickpeas and yellow curry powder.
Pair it with sourdough bread and maybe some toasted pumpkin seeds. Love 🍂

Curry ramen with prime pork underbelly at Rakiraki in San Diego. Crispy flame blistered pork was well worth the upcharge and was a good texture contrast to the noodles, which are described as double thick and certainly had a bit of weight and chewiness to them.
