9 Days ‘til Christmas 🎄
So I thought I’d share a treat today. I’ve made these ‘hybrid’ Spiced Cookie Scones which are a bit chewy cookie/scone in texture! They’re spicy, orangey & cranberry flavours and fab served with thick coconut yoghurt.
I used half white Teff/ half a Starchy Flour to increase the protein & fibre levels considerably. Just bear in mind the texture will change with different flours, it’s the starch that produces the airy spready consistency. A less starchy flour with likely make them more like spiced scones, which will still be lovely!
They’re Vegan, completely allergen free and low in Fodmaps!
Play around with flavours, dried fruit or even try vegan choc chips.
Pre-heat oven to 200 Fan. -4oz GF Flour, I used 2oz of Shipton Mill White Teff mixed with a white GF Flour with added Starch. -1 tsp of GF Baking Powder
-1 tsp Mixed Spice
🎄Whisk the above together until well combined.
-1.5oz Coconut Oil
🎄Combine the oil into the flour until Breadcrumbs.
-Add the grated zest of one Clementine.
-Add 2 tbsp Dried Cranberries. 🎄In a jug mix:
-Juice of the Clementine.
-80 ml of DF ‘Milk’, I used Tigernut Milk. -2 tsp Maple Syrup. 🎄Gradually add the liquid mix to the flour mix with a knife. You want just enough to bring the mix together. This will vary depending on the flour (I ended up needing a bit more ‘milk’). It needs to be quite wet. 🎄 Tip the dough out onto a clean, floured work surface. Smooth the dough into a ball and pat it down until still a good inch in height, then cut out in small rounds. 🎄 Place on a lined tray, brush with a bit more ‘milk’ and bake until brown, and they sound hollow when tapped underneath. (12-15 mins). 🎄 Allow to cool slightly and serve with thick coconut yoghurt. Best eaten as fresh as possible.

I woke up this morning with the urge to make cupcakes so I could eat the cake mix to cure a minute head fuzz from the 2 drinks I had last night (can't hack it anymore). So I made some very messy #vegan #cupcakes
with the attempt to do some pretty marbling (deffo felt like I had become Mary Berry for the best part of half an hour whilst doing this) and ended up with these very interesting looking cupcakes that are the 'ugly ducklings' of the baking world. So I sprinkled hundreds and thousands on them because they fix every cake right? #beautyisontheinside

We usually make it with raw milk which is delicious,.
but we’re going #dairyfree
this year to avoid the real risk of triggering joint pain, a bloated painful tummy & migraine! 🥺😬😁.
So if you’re sensitive to dairy & soy (which is in MOST processed foods) like me,.
try this Dairy Free EGGNOG recipe.
It’s spicy, gut nurturing & delicious!.
✨ 6 cups or 3.5 cans of organic coconut milk 🥛 (or try almond milk mix).
✨ 1 Tbsp vanilla extract.
✨ 6 pastured organic egg yolks.
✨ 1/4 cup organic maple syrup.
✨ 1/2 tsp ground nutmeg.
✨ 1/2 tsp ground cinnamon.
Using your choice of blender/mixer blend all the ingredients til smooth. Bring slowly to a warm heat until just beginning to thicken (do not boil). Chill in fridge for a few hours or leave overnight. Serve & enjoy! 😉

banana paleo pancake mix (avail online, at Target, etc.)
• 3/4 cup water
• 1/4 cup coconut oil
• 1/2 cup hemp seeds
• 1.5 cups organic blueberries (i used organic //frozen)
• 2 tbsp cinnamon
• 4 tbsp maple syrup
* Preheat oven to 350 degrees + grease muffin pan with coconut oil
* Combine @birchbenders
banana paleo pancake mix, water, coconut oil, hemp seeds, cinnamon, and maple syrup in a bowl, then fold in blueberries
* Spoon batter into muffin pan, then bake for 30-35 mins. Let cool for 10 mins before devouring. Makes 12 muffins.
The yummy Vegan potato and chickpea curry I made yesterday 😋😋 I’m intolerant to wheat, lactose, garlic and paprika 🙄😂 so ready made curries and curry pastes are a massive NO NO for me!! So I decided to experiment with my own spices! 🌶
The main ingredients are 3 potatoes, 2 sweet potatoes, 1 stick of celery, 1 pepper, handful of spinach, 1 can of tin tomatoes, 1 can of coconut milk and 1 can of chickpeas and brown rice. As well as 2 dashes of garlic infused oil, a sprinkle of ginger, a sprinkle of cayenne pepper, a sprinkle of turmeric, salt and pepper.
Pop it in a pan, mix it together and leave it to cook on a medium heat till the potatoes are nice and soft, cook the rice and then EAT!! 😍❤️ #reachyourpotentialfitness #cambridge #cambridgefitness #cambridgept

Gluten, Dairy and refined sugar, plus they’re vegan friendly 🌱
Base: - 1/4 cup Sunflower seeds - 1/2 cup raw unsalted almonds - 1/4 cup coconut chips - 1/4 cup rice malt syrup - 2 tsp chocolate almond butter - 1 cup gluten free oats
1) Blitz the almonds, sunflower seeds and coconut chips in a high speed blender, add oats, and blend briefly, the stir in almond butter and rice syrup. Spoon mixture into a tin lined with baking paper and press down with your fingers. Place in freezer.
Matcha filling: - 1 tsp Matcha powder - 3/4 cup coconut cream - 1/8 cup Rice Malt syrup .
Mix all ingredients, and spread mixture over the base. Place in freezer for 30min.
Chocolate topping: - 1/4 cup rice malt syrup - 1/8 cup cacao powder - 1/4 cup coconut oil .
Melt all the ingredients in a saucepan until smooth, allow to cool, stirring every few seconds , and pour over matcha mixture. .
Freeze for 2-3hrs until firm, then cut into fingers or squares and enjoy! 🌱✨🌈

Most of us consider yogurt a healthy snack, but it turns out it isn't as innocent as we think.
A study published in the British Medical Journal is the latest reminder that not all yogurt is created equal.
Researchers analyzed more than 900 yogurt brands found in supermarkets and found that only 9% contained less than five grams of sugar per 100 grams.
The study also warned of the "health halo" effect that leads consumers to automatically assume that organic products are healthier, despite this category of yogurt having the most sugar.
Organic yogurts contained an average of 13.1 grams of sugar per 100 grams, which is roughly equivalent to three sugar cubes, while children's yogurts averaged 10.8 grams. ➡️Greek and natural yogurts were the least sugary varieties, with an average of five grams per 100 grams of yogurt. ➡️One Yoplait yogurt, marketed with Disney's popular Frozen characters on it, contains 13 grams of sugar in a 113 gram serving. ➡️Chobani Kids had 9 grams of sugar in a 99 gram serving. ➡️YoCrunch low-fat yogurt sported 12 grams of sugar in a 113 gram serving, but that number spikes up to 19 grams of sugar if you add the accompanying "mix-ins," like Oreo cookies or M&M candies.
What is worrying, is that people are often not aware just how much sugar they're consuming when they eat yogurt.
So, the next time you are buying yogurt, take a closer look at the sugar content on the label and choose one that has less sugar. .

okay - so this, was an experiment. And I gotta say, it’s one of my favourite things I’ve ever made.
This isn’t your regular carbonara. Those crispy things aren’t bacon and there’s no butter or eggs in the sauce (making it veggie and vegan friendly)
I’m not even going to downplay it - this is SO GOOD. It’s got that signature creamy peppery taste and the mushrooms have just the right kind of meaty texture and salty flavour 🤤 (vegan/veggie or not, this really is delicious and has been tested on my non-veggie family for approval!) I had something else planned for dinner the day I made this, but after I tasted it I dropped the lot and devoured a huge bowl of this instead. No ragrets.
This recipe is number 1 of 2 I made with a little box of Oatly cream, just to see what I could do with it. The second will be up soon, and this one is on the blog now so go go go 👏🏻

⭐️ANTI-INFLAMMATORY TURMERIC GUMMIES ⭐️ It is a well known fact that turmeric has incredible powers to fight against inflammation. It contains a component called curcumin, which has been proven to inhibit inflammation. But what is inflammation? It is a defence mechanism in the body which protects us against foreign invaders such as bacteria, viruses and toxins. Chronic inflammation occurs in the body when this response lingers, leaving you in a constant state of alert. Food intolerances, allergies, a compromised immune system (auto-immune disease, cancer), long term exposure to chemicals or pollution or an untreated injury can increase inflammation levels
What to do?? Include fresh fruit and veg, beans and legumes, healthy fats, herbs and spices, good quality protein, green tea, red wine in moderation (contains an incredible antioxidant called quercetin) and foods high in omega-3 fatty acids. Move your body and find something you enjoy that helps you manage your stress
Here is the recipe for my turmeric gummies:
2 cups filtered water
1/2 tbsp organic ground turmeric
3 tbsp raw honey
4 tbsp grass fed gelatin (I use @nutraorganics
Pinch of black pepper
Place the water, turmeric, honey and black pepper into a saucepan and heat through for 5 minutes. Take off the heat and stir though the gelatin until dissolved.
Place into moulds and refrigerate for at least 4 hours before removing. Store in the fridge for up to 5 days.
Friday, dinner at home and we go for the vegetables. Pie with broccoli, mushrooms, red onion and zucchini. Green love! 💚🌱
