2 medium butternut squash
3 tbsp olive oil divided
2 medium yellow onions chopped
3 stalks celery chopped
5 large carrots chopped
3 cups cauliflower florets
6 cloves garlic minced
3" piece ginger peeled and sliced
1 small red chili optional
6 cups low-sodium vegetable stock plus more as needed
15 ounces coconut milk plus more for serving
4 tbsp white miso
Fresh cilantro to garnish
Sesame Seeds to garnish
Pumpkin Seeds to garnish
Sliced Lime to garnish
Happy Friday night! This week flew by and I can’t believe it’s already the weekend again 😜 with the colder temperature today I wanted a nice hearty warm dinner tonight so I made just that ☺️ I took a chicken breast and coated it in some @traderjoes
savory seasoning + salt + pepper before grilling it on my indoor grill 😛 I had some leftover sweet potatoes from earlier this week that I reheated in the oven + sautéed some spinach + tomatoes in @chosenfoods
avocado oil 👌🏻 the avocado oil gives them such good flavor 😋 I sprinkled some EBTB seasoning on the spinach and just like that my dinner was done 👍🏻 only about 15-20 min total! I used to think that eating healthy had to be time consuming and expensive but that’s not the case 🤗 hope you all enjoy your Friday night whether you have big plans or you’re just relaxing at home 💕

I started going to the grocery store Friday morning instead of the evening or on the weekend, thinking that it wouldn’t be busy... Basically it’s the busiest that I’ve ever seen it. Soccer moms and soccer dads are crawling through the aisles, hauling their carts around. And I get why they go on Friday mornings because the kids are stationed at school so they take advantage of a childless grocery experience. The cool thing about going grocery shopping on Friday morning is that everything is stocked or getting stocked. And nowadays with @violifeamerica
cheese just now starting to arrive at my local Whole Foods, that stuff sells out once it hits the shelves so you gotta get out there!
But I’m actually going grocery shopping tomorrow morning before my knife skills workshop at Williams Sonoma, which I highly recommend looking into if you have one in your area because they do a bunch of free classes! Most of them aren’t vegan, but some, like the knife class, are. I’m gonna slice and dice some innocent vegetables with freshly sharpened knives tomorrow and I can’t wait ;)

🌽 Creamy Corn Chowder 🌽
Dairy free • Gluten free • Oil free • Nut free
AND IT’S NOT WATER?! 😂 jokes jokes
But really, this soup is so creamy but so simple and so chock full of veggies, it makes no sense that it tastes as good as it does.
Sweet potato, corn, red bell pepper
Carrots, celery, onion (THE soup base trio)
Garlic, veg broth, chili powder, paprika, salt & pepper
That’s it!! It took maybe 30 minutes, the bulk of it was just chopping up all the veggies!
It’s the perfect soup if you’ve got a cold bc it’s got all the nutrients from the veg, no dairy so it won’t speed up mucus production for that sore throat🤧 (sorry gross ik), and it’s warm and hearty. The perfect meal to curl up in bed and watch some Netflix with.

My favorite thing to do in life is eat.. and I have done none of that in the last 48 hours. Well today I had toast and watermelon. Thats it. 😳 haha. I had been taking 2 different vitamins that contained dairy and didn’t know it. Yesterday my body had had enough!!!! I’ve been in pain ever since. Wah wah.
This guy right here has been so sweet to take care of me. He’s been bringing me water, any sort of food to try to get me some energy, playing with my hair, tickling my back, gave me a priesthood blessing, stayed up alllll night comforting me, the list goes on. I’m very grateful for him. I fall more and more each day.

With lunchtime, I’m all all about keeping it easy & simple! This meal contains all 3 macronutrients- protein (hummus, cashews), fat (avocado, sprouted hummus, cashews) and carbs (japanese sweet potato & clementine). So easy and the only thing that needed to be cooked was the sweet potato 👌🏼
Face To Face Friday, Instead of focusing on the weight for today, instead I want to touch on my acne struggles. In the first picture I was about 60 lbs heavier than I am now and my skin reminded me on the daily how bad my nutrition actually was. I was eating like absolute garbage, lots of dairy, gluten, fast food, white carbs, sugar etc. I have managed to calm my skin by taking care that I don't eat dairy and gluten and focus on whole foods or try my best to be paleo based. Genuinely it breaks my heart when people struggle like I did (and I still do if my diet is not clean) with acne but they will not address their diet. I focus on fruit, veggies, proteins, nuts, seeds and stay away from dairy/gluten/garbage food at all costs or I pay dearly for it. So today I am thankful for clearer skin its a none scale victory! Focus on feeding your skin from the inside at least that's what helped me tremendously. Acne is incredibly hard to take mentally and physically and my heart goes out to anyone who feels they are less because of it. You are not alone and you are worth just as much as someone who has clear skin. It will pass 😘😘😘😘😘😘😘😘
One of my favourite things to eat before I was vegan or pescetarian was sweet chilli chicken pizza, so tonight I made a vegan version using the new margherita pizza from Tesco.🙌 I just added some bell pepper, red onion, sweet chilli sauce, and cut up a quorn chicken fillet 🍕

PIZZA FRIDAY!🍕 can pizza actually taste good without cheese? yes! coming from a family that ordered extra cheese pizzas growing up, I was sad thinking that pizza would never be the same once I went dairy-free. luckily that's so not true and I enjoy pizza even more now - no upset stomach + better-for-me toppings. this avocado cream is climbing the charts as a favorite topping.

almond flour pizza dough - pizza sauce: heat 1 can diced tomatoes + 3 oz tomato paste + 2 tablespoons italian seasoning in saucepan
- pizza toppings: cooked italian turkey sausage, sautéed chopped purple onion + sliced fennel + mushrooms + chopped artichoke hearts
- avocado cream: blend 1 avocado, 1 lemon (squeezed), 3 tablespoons water, 2 tablespoons avocado oil, 2 tablespoons nutritional yeast, 1 tablespoon apple cider vinegar in food processor
Homemade peanut butter is so quick to make.
Blitz peanuts to a fine crumb and add a little coconut oil😋😋😋😋
