Something amazing I found that just so happens to be vegan. They are whole almonds stuffed into dates and dipped in dark chocolate! They’re such high quality and very affordable. I have no idea whether or not you can find them but if you do, definitely buy them! Alternatively, you could definitely make a huge batch of these yourself and keep them in a container in the fridge or freezer. Making date balls this week, my favorite snack when I want something sweet but I want to stay healthy!
2 cups walnuts, 1 cup shredded unsweetened coconut, 2 cups soft Medjool dates (pitted), 2 tablespoons coconut oil, 1 teaspoon vanilla extract
Use a food processor to mix the walnuts and coconut until crumbly. Add in the dates, coconut oil and vanilla and mix again until a sticky paste forms. Form into one inch balls and refrigerate.

🥛CASHEW MYLK 🥛
Have been doing some reading on ways to help with a natural childbirth and naturally I turn to food first. One thing there’s been some good studies on is date consumption in the last month and it’s been shown that 6 dates per day can help with cervical ripening (sounds delightful 😂). I’ll try anything that won’t have any negative affects on me or my baby so I’ve been looking at ways to include dates daily rather than chomping down on them as they’re really sweet for me. So here is date sweetened Cashew MYLK and it’s delicious, nourishing and quick and easy to make. I’ll be using it in my smoothies and daily porridge.
CASHEW MYLK (Makes 1.5-2L)
- 1 cup cashews - 3-6 medjool dates, pitted - 1.5L water - tsp vanilla
1. Boil the cashews for around 10-20 minutes. Drain and rinse.
2. Add the pitted dates to around 1/2 cup hot water to soften
3. Blend the dates in the water with the cashews, vanilla and a little more water. Blend until smooth. Top up with how ever much water you’d like to use. I use 1.5L and it’s smooth and creamy but not to watery. - will last for 4-5days in the fridge

If you want something sweet then here it is. It’s my take on magic bars. It’s a no bake recipe.
For the crust: *1 1/2 c of almond flower
*1/2 cup of dates
* 1/3 c of maple syrup *1/2 cup peanut butter
*1tbs melted coconut oil
*3/4 cup of shredded unsweet coconut
Caramel glaze: 1 tbs coconut oil melted
*3/4 cup of pitted dates
*1/4 cup water
*1 tbs maple syrup *pinch salt
*3 tbs cacao nibs or dairy free chocolate chips *walnuts
*shredded coconut *process the crust in a food processor and place in a 9x9 pan. I used a 5x9 loaf pan and I think they are too thick. Then mix the glaze minus the walnuts, chocolate chips and coconut. Spread the glaze on after the crust has sit in the fridge for about 15 minutes. Top with the walnuts, chips, and coconut. Place in the freezer for at least an hour. They are very sweet. It reminds me of German chocolate cake😊
