I was inspired by @dianesanfilippo
to make the lamb chops that have been sitting in my freezer since the summer tonight! I was so intimidated to cook them, but they turned out to be so simple to make 🙌🏻 My fiancé and I eat cheaper cuts of meat usually, so this felt like a very fancy dinner for us 😂 I served the lamb chops with sweet potatoes and Brussels sprouts. Everything was so good!! I love cooking dinner on Sunday nights and preparing for the week ahead ☺️

Cuz I’m leeeavin on a jet plane, don’t know when I’ll be back again 🎶 ✈️ Today I said goodbye to one of my favorite cities (only my love for London and San Francisco rivals my love for DC! ❤️), and even though I don’t know when I’ll be back, I know it will be SOON. I’ve never seen moving from a lens of sadness or loss, but rather from a lens of opportunity and gain — a chance to grow and evolve; a chance to meet new people and experience places and things that enrich my life and broaden my perspective ☺️✨ I know the memories and friendships I made in DC will be with me and stay with me as I start this next chapter 💃
This was one of the last meals I made in
my apartment, which is appropriate because DC was the place I fell in love with cauliflower gnocchi 😂. It was also the place where, after many years of restrictive eating and obsessive exercise (I call this stage of my life my “faux health stage” — the 5+ years I thought frozen *lean cuisine* meals were healthier than salmon because they contained less fat and fewer calories 🙄), I LET GO and embraced a more holistic approach to eating and living — one characterized by self acceptance and self grace.
This is my long-winded way of saying (and gosh, this really IS getting long — sorry), that I think the different chapters in our lives — which often begin and end when we make bold, big changes like a move — are what make our books beautiful (as cheesy as that sounds) ✨😌.

I’m about to go back home for the holiday break and I don’t want anything in my fridge or pantry to go to waste !! I’ve been finding ways to recreate and make a ton of leftover goodies and this is one of them:
Blackberry Dyed Oats
1/2 cup of oats
1 cup of water (or milk)
Handful of organic blackberries
Blackberries go into the mix when the oats are done. Smash them up and your oats will turn prettynPink 🌷
Matcha Oatmeal 🧚🏻♂️
1/2 cup of oats
1 cup of water (or milk)
1 tbsp of matcha
I put my oats in a pot with water and mix that around until the oats are fluffy and creamy. Then I shut the heat off and put the matcha in and mixed it all around and served VOOOILA !! (+ peanut butter, blueberries and blackberries)
