One of the nice things about our local sushi spot is I can order takeout and request each roll with no rice with zero eyebrow raises.
While I'm certainly no sushi chef, the good news is most rolls can be made easily without rice and it turns out avocado is a pretty damn good "glue" for holding everything together. If you've been sans sushi for a while, ask your local spot if they can do this too. . . .

Good old CHICKEN BONE BROTH! 🥘🐔☘ This one never gets old. And I am finally getting around to posting all the dishes I prepared for this year's holidays. Here is how you prepare this classic:
Chop 3 onions, 3 carrots, a celeriac root, parsley, and 1 garlic clove and place them with some olive oil in a big pot. Fry them on high heat until the onions are glazing and the other vegetables are a little bit roasted. Now add a whole chicken and fill up with filtered water until the chicken is covered with water. Add Italian herbs, salt + pepper, 1 bayleaf, and if you like it spicy (ootional) some chilli. Now bring the pot to boil and then lower the heat to medium. Let it simmer for at least 3 hours. The longer it simmers the more nutrients you get out of it. So 12 hours is fine, too. Then take the chicken out (probably in pieces since it falls apart) and let it cool a bit. In the meantime filter the broth into another pot. Chop more vegetables of your choice. I picked zucchini, spring onions, and carrots. Pull the chicken apart with a fork or simply your fingers and add it to the broth. Heat once more so soften the vegetables and the chicken soup is ready to serve. As garnish add cilantro, black sesame, and more spring onions. Since you get a lot of soup I recommend freezing a few portions. As the temperatures drop it is the perfect warm, soothing, and quick dinner for busy work days! .

I made it! I’ve completed my 21 day Keto challenge! I’m proud of myself for sticking to it and I feel great. I’m going to weigh myself in the morning. And I decided I’m going to keep going until Friday and then start a new Keto challenge on Oct 1 (this time working on improving my macros). Today I was really craving steak...so I had it twice.
Breakfast: two slices of smoked salmon rolled with cream cheese.
Snack: handful of pork rinds
Lunch: carne Asada plate, skipped the rice and beans so it looked more like a deconstructed salad with lettuce, guacamole, Pico (only ate a little), sour cream, jalapeños and meat. First time I ate out in 21 days
Dinner: top sirloin with butter and blue cheese crumbles. Yum.
Desert: Lily’s dark chocolate almond 1/2 bar

Ok... so tons of people in my family have been so successful with Weight Watchers this year, I decided to give it a try. Yes I believe in keto, yes I believe in paleo, but do I want to eat more carbs? I do. I can not deny it. 😂 I always hit an emotional/stress wall and binge and gain back weight and cannot stay consistent (I’m a total yo-yo eater). So I decided, what can it hurt? I’ll try WW for a week. I was not strict, some days I had soup/sandwich at Panera and one day I even had a brownie and glass of milk. I actually haven’t eaten a banana in like 2 years... it was SO good!!!! And I lost 5.6 pounds?! Ok this diet is a breeze!! I am so excited! And really, the cool thing is that it’s not a diet! It’s just being sensible, but helping me maintain control. And splurge wisely. So.. I am giving this a go. Sorry strict keto-ers and paleo peeps, I understand if you unfollow. However, I don’t plan to eat junk but maintain good healthy recipes that use whole foods 👏🎉👍

Eating keto is working so well for me...not only have I dropped about 13 pounds so far, I feel great and preparing meals that work for me and my family is simple! It's so much easier to make a lifestyle change when I'm not having to cook separate meals. 🙌🏼 Tonight's dinner: Chateaubriand, sauteed zucchini fettuccine and I added an avocado on the side for me to hit my macros. 31g protein, 38g fat and 4g net carbs. #yum

Served with a ramekin of Cauliflower “Mac n’ Cheese”. 🌝Basically tastes like Mac n’ Cheese minus the Pasta and Carbs. 🌝I made a Sauce with Heavy Whipping Cream, Sharp Cheddar, Smoked Cheddar, Italian Blend Cheese and topped it off with some 4505 Jalapeño Cheddar Chicharrones for the breadcrumb effect.

Any other fellow keto lovers out there? Since I don't drink coffee and haven't jumped on the bulletproof coffee trend, Rogue Cocoa has been a lifesaver. It is super low carb (only 2g 🤯)and very low in sugar! My favorite way to make it iced:
◾Mix 2 scoops of coconut Rogue into a small amount of hot almond coconut milk
◾ Add 1 scoop of @perfectketo
unflavored MCT oil powder and mix ◾Add remaining almond coconut milk cold
◾Add 1 Tbsp of heavy whipping cream
◾ Mix all together with an immersion blender
◾Pour over ice or refrigerate overnight and enjoy!!
Nutrition info: 17 g fat, 0 g protein, 3g carbs (up to 4 depending on brand of cream)
The coconut flavor is incredibly light and creamy! It is great for the morning or for #intermittentfasting
and the caffeine kick is just the icing on top 😍

Not going to lie... I SLAYED the single mom thing while Nick was away for the week at our company event. 🏆 But we are all ready for him to be home tomorrow. Not because we need the extra hands, but we genuinely miss him when he’s gone. We’ve gotten used to working as a family and being around each other. The kids miss his craziness and I miss laughing with him. I’m glad he got to go fill his cup, though, because this is about to be our BEST YEAR EVER... emotionally, spiritually, physically, in our faith, in our mindset, in our parenting, in our marriage, in business, in abundance, in love. Ugh the best Thai food ever, I literally compare all Thai food to this one restaurant...hot basil chicken, salad and not pictured is cucumber salad...the salads had higher sugar because of the sauces but yolo I was home and I have to have this place when I go but if you are interested in the easiest tastiest cucumber salad here’s the recipe:
Chopped cucumber (very small)
Shredded purple cabbage
Shredded carrot *optional but a little pinch really adds a lot!
The key is to put enough sugar sub to make the sauce a little syrupy!
