NOVEMBER DAILY CHALLENGE!
Goal: Meal Prep all meals for the day!
So many days my schedule is filled from morning to evening. The last thing I want to worry or think about is eating healthy. Meal prep making eating healthy easy, quick and convenient.
I got a head start last night - inspiration from my friend Whitney: Almond Chicken Veggie Salad with TJs Green Goddess Dressing👌🏽Preparation is the key to success. .

If you’ve been following here for a while, you know that nutrient density is high priority for me. I want to make sure that I’m filling up my plate with as many vitamins/minerals/grams of fiber as I can fit on it! 9/10 times this means lots of veggies and some nutrient powerhouses like herbs, micro-greens, ferments, etc. However, ENJOYING your meal is equally important. Before we moved, I was in a bit of a food rut, feeling a little burned out on my usual choices. Expanding the variety of my diet to include things like this bread when I truly wanted it has been refreshing!
I go through cycles. Some weeks I’m totally content with very simple foods. Other weeks I want to cook something fun and new. And there are still other weeks where nothing sounds good at all! The key is to just keep moving forward and don’t think about it too much. Food is enjoyable, and if it’s causing you stress, then let’s find a different way to approach it! PS. a note about the timing I mentioned in the first paragraph. You can eat a meal like this ANYTIME YOU WANT, I just feel my best personally when I match a higher carbohydrate meal with a higher level of activity. I don’t always pair the two together, but today I did!

Need an easy, last minute dinner idea? On a cold day like today, you can’t go wrong with chili and cornbread! Check out my easiest ever cornbread recipe below! 😋 ***Easiest Ever Cornbread*** Ingredients:
1 cup flour
1 cup ground cornmeal
1/3 cup sugar
4 tsp baking powder
1 tsp salt
1 cup buttermilk (or milk with a splash of vinegar)
1/4 cup oil
Preheat oven to 350. Combine all dry ingredients in a bowl. Add liquids. Mix together. Pour into a greased baking pan - I use an 8x9” pan and that size bakes for about 20-25 minutes. It’s done when the top is light golden brown and a toothpick comes out clean. Let cool and enjoy!

I like showing these breakfast plates to illustrate how easy a lot of my meals are - lots going on but it’s all simple and straightforward, and takes very little time to make! This plate took about 10 minutes total and as usual was downed in less time than it took to make 🤷🏻♂️. That’s the key! Don’t let food be a chore, let it be easy, natural, and delicious.
For this plate I’ve got all the goods - 2 fried eggs, a few pieces of @butcher_box
bacon, some toast, roasted tomatoes, and half of an avocado, all sprinkled with chives and spices! Happy Tuesday to my PEEPS! #chezyonsunshine
This is based on a classic spinach/rice dish we make in Greece, and I pretty much just replaced rice with cauliflower cause I really like the flavour. This is great when you want a nice comforting bowl of yummy food but also want to fit in your jeans by the end of the week. I use all washed packaged veggies here so it’s super easy and quick, vegan ( if you don’t add yogurt at the end) and super healthy. - 2 bags of washed organic spinach - 1 bag or organic cauliflower rice - 1 bunch of spring onion finely chopped - 1 bunch of dill, washed, stemmed and finely chopped - Juice of half a lemon ( or more if you like) - 3/4 cup of olive oil
You can add a dollop or Greek yogurt, some crumbled feta, pine nuts and/or pepper flakes at the end if you wish.

is simple and plain yet so extraordinary in taste and texture. The added crunch from the sesame makes it complete and so so good. Adding some nuts like walnuts in the batter would be a great option next time. Thanks to my friend Nadia @potsnbites

Sesame Tahini Cake
2 cups flour
1 1/2 tsp baking powder
Pinch of salt
1 1/2 cups sugar
1 tsp vanilla essence
1/2 cup coconut oil or oil
1 cup milk
1/2 cup tahini
Preheat oven to 350F :
*Whisk flour, baking powder and salt and set aside. ... *With an electric mixer whip the sugar and eggs and vanilla until foamy, then add the oil, milk and the flour mix to this mixture... mix well for 1 minute.
... *Add tahini in the final step and mix until the mixture is very well blended. About 2-3 minutes. ... *Butter or spray the baking pan used and sprinkle the bottom with sesame. ... *Pour batter in a bundt cake pan (or 2 loaf bread pans) just make sure the batter is not filling more than half the depth of any pan. ... *Bake for 40-45 minutes. Once toothpick is inserted and comes out dry, its done! 3 overripe bananas, 2 large eggs, 1 tbsp vanilla, 1 tbsp cinnamon, 2 tbsp honey, 2 cups almond flour, 1 tsp baking powder, dash of salt, a ton of chocolate chips
HOW ITS DONE👇🏼
Preheat oven to 350. Mash bananas in a large bowl. Add everything except almond flour and chocolate and whisk until combined. Then add in flour and chocolate chips and mix. Pour into a lined loaf pan and bake for 50 mins.

Add Beetroot Powder in a large stockpot. Add 4 cups chicken broth, Himalayan Pink Salt and pepper. Cover and cook for 45 minutes or until beets are tender. Meanwhile, heat the butter in a large skillet over medium heat. Sauté the onion and carrot, constantly stirring until carrots are tender and onion is soft, and they give off a sweet aroma. Once onion and carrots are soft, add them to the beets and broth. Let the soup cool a little bit, then transfer to a blender, add the additional broth and blend until smooth. Place the soup back into a pot and adjust salt and pepper to taste. Bring back to a simmer and serve.

Steak Veggie Stir Fry🍜
Boil 3 packs of instant ramen noodles without the seasoning packs.
Cook about 1 pound of thinly sliced steak in a pan with a tablespoon of olive oil. Remove from pan.
Add a tablespoon of sesame oil to the pan. Add 3 cloves of minced garlic & a tablespoon of minced ginger. Sautée for a minute until fragrant.
Add 1 cup of beef stock, 1/4 cup of brown sugar, 1/4 cup of soy sauce, dash of siracha. Stir the mixture in the pan.
Add chopped veggies (I used carrots and broccoli)
Cover the pan and let the veggies steam and cook on medium heat for about 5 minutes.
Add steak back to the pan.
Add cooked ramen noodles.
Mix everything together and garnish with green onion.
Enjoy this stir fry/ramen goodness!!
