So most people who follow my blog and discuss media know by now that I’ve been on a bit of an allergy rollercoaster, and was recently told that I can eat wheat, eggs and nut relatively safely going forward. But I’m so used the GF life and I know it’s better for me so I’m determined to keep at it! And honestly, dishes like this just make it so fun and YUMM! It checks all the boxes! 🔸Gluten Free 🔸relatively healthy 🔸 budget friendly 🔸super easy to make 🔸 get-in-tummy delish!!
Start here but adjust the ingredients for the sauce to your own taste.
• spring roll rice paper
• bag of julienne veg • chicken (optional)
• 2 Tbsp. peanut butter
• 2 Tbsp. soy sauce
• 2 Tbsp. sesame oil • 1 tsp. sesame seeds
• 1 tsp. honey • splash of lemon juice
Soak your rice paper in warm water for 3-4 seconds, until rice paper becomes moistened. Then lay your wrapper onto your work surface, allowing it to soak up water and become soft and pliable (30 seconds to 1 minute) before you start to roll.

For dinner tonight I made chicken Parmesan, where I made my own bread crumbs, with mashed potatoes and corn on the side! This came out really delicious 😋

For dinner I made a triple stack cheese burger with Havarti cheese on a light brioche bun with my own mix of ground beef! It has a delicious garlic aioli, prosciutto and fresh veggies!
