About those delicious Ginger Garlic Lemongrass Chicken Lettuce Wraps featured on my Instagram story the other evening 😋
🌱Lemongrass is excellent for digestion, rich in antioxidants and packs in a delicious punch of flavor to this dish. Hope you enjoy as much as we did. .
1 pack organic chicken breast
1/4 cup peanut butter
2 tablespoon extra virgin olive oil
3 tablespoon hoisin sauce
Juice from 3 limes
1 Lemongrass stalk, grated
1 knob ginger, grated
2 garlic cloves, grated
1/2 red onion, chopped
1 bell pepper, chopped fine
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1/3 cup peanuts, for topping
1 head Lettuce
1 can water chestnuts
Begin by slicing the chicken breast into small strips or cubes. In a mixing bowl, add the hoisin sauce, olive oil, ginger, garlic, Lemongrass, lime juice and peanut butter + salt/ pepper. Combine well. Pour 1/3 cup into a separate bowl and save for later. Place the chicken into the mixing bowl and combine. Store in fridge to marinade for 1 hour.
Meanwhile, chop the red onion and bell pepper. Sauté it lightly in a pan and set aside. Place the chicken into a pan with a touch of oil and cook through. Add the red onion bell pepper mix to the chicken and stir lightly. Pour into a serving dish.
Smack the head of lettuce against the counter to carve out each lettuce cup. Place the chicken mixture into a lettuce cup and add some peanuts and water chestnuts. Finish with the 1 teaspoon of the remaining sauce.
