Another week, another menu plan + grocery list 📔🖊 our little tree is up, there’s snow on the ground, and three blankets on the bed so I’d say a fair amount of comfort food is being pined for over here 🌲 I wanted to address a question I receive somewhat often, and that’s how do we keep our grocery budget so low. Beside the fact that we live in the south where cost of living is generally more affordable, and most things we eat are made from scratch, here’s the answer: we don’t go out of our way to buy organic. I know this isn’t a popular position (especially in the sustainability niche!) but we just can’t justify spending nearly twice as much on food that may or may not be better for ourselves or the environment. The evidence is inconclusive at this point in time so we’re just not convinced 🧐 tbh I’d rather buy a metric crap ton of conventional produce than get like three apples and five potatoes for the same price. Sometimes we do choose organic, when the price is reasonable and it comes package-free, e.g. carrots and kale. At the end of the day, though, I believe eating vegetables is what’s good for us and the planet. Do you buy mostly organic or do you agree that “fed is best” 😜 I’d love to know your take!

✨roasted BUTTERNUT SQUASH & GOLDEN BEET salad with POMEGRANATE✨Here is the recipe I demo’d on @imperfectproduce IG story yesterday! If you missed it, go ahead and check it out on their page. This could make a great holiday party side dish everyone will love! Have you ever tried golden beets? _____ dEATS👇🏼 1️⃣ I washed, peeled then cubed the @imperfectproduce butternut squash & golden beets. Lay on a parchment paper lined baking dish & roasted at 400 for 40 min (flipping half way) then broil for the last 10 min (if you like that char). 2️⃣ I deseeded my pomegranate (I have such a great tip on deseeding in the @imperfectproduce IG story). 3️⃣ Make your maple balsamic dressing in a mason jar: Add 1 tbsp balsamic vinegar + 1 tbsp olive oil + 1 tbsp dijon mustard + 2 tsp maple syrup + 1 tsp apple cider vinegar + juice of 1/2 lemon + salt + pepper (this dressing is literally so good on anything). 4️⃣ Once the veggies are done roasting, toss them in a big bowl with the deseeded pomegranate + toasted pumpkin seeds + maple balsamic vinaigrette + feta cheese (serve warm or cold).

It’s been a busy kind of week - sorting the new house (attempting to unpack the maaaany boxes, deep cleaning and generally find some kind of order🙄ish) and watching four nativities 🤩✨💕😇 ... That’s on top of remembering the basics like get the kids dressed and ready for school, taking them AND their relevant stuff in to school, not forgetting the lunch box (or a small child 😂) ... It’s no wonder I woke up today feeling like I have a brick in my stomach 😔time to refocus and get back in the kitchen, cooking not deep cleaning 💪 ... So before I left for the school run this morning, I soaked some green lentils with absolutely no vision, ran out the house, got the twins changed in to their nativity costumes, saw their first nativity ever 💕, came back and put together this little bowl of tummy hugging goodness🤗 ... On top of these fibre filled lentils are some gently pan fried aubergine, red pepper and spinach spiced with some #gutloving turmeric, paprika and a pinch of chili powder, topped with shavings of raw red cabbage and a poached egg, finished with a sprinkling of hemp seeds 🍲 ... My intention was to overload on nutrients, and put together a nicely balanced lunch at the same time. this small fry made a big stir fry for dins 😜🍲🥢 this is one of my fave easy weeknight meals, as it’s pretty quick to cook! I used fresh grated ginger, shredded carrot, chopped bok choy, zucchini, scallion and large fresh shrimp 🥕🥒🍤 I sautéed all of those first in a bit of sesame and coconut oil, then added in @365bywholefoods frozen organic Thai jasmine rice. Did you know jasmine rice is one of the easiest rices to digest? I love using the frozen rice too, as it’s so quick and easy vs cooking dried rice after work 🍚🍚 I then added in a bit of low sodium soy sauce, rice vinegar, and the Union Foods chili sauce (garlic/onion free!) 🌶🔥 Very filling and delish 😋
This is a delicious laksa curry packed full of flavour. For more flexitarian recipes & articles see blog (link in bio). Serves 4 Here's what you'll need: Curry Paste 2 lemongrass stalks 6 garlic cloves 2 kaffir lime leaves 2 shallots,chopped 2 green chillies, deseeded & chopped 50g fresh ginger, chopped 2 tsp turmeric Juice of 1 lime 1 tbsp oil Fresh coriander chopped Curry 1 tbsp of coconut oil 1 red onion, sliced 2 garlic cloves Zest and juice of 1 lime 2 tbsp of soft brown sugar 2 cans of coconut milk 200ml vegetable stock 2 kaffir lime leaves 5 tbsp soy sauce 1 tbsp rice wine Vegetables of your choice (I used parboiled sweet potato, peppers, defrosted peas & broccoli) Fresh spinach Peanuts To make the curry paste: Using your food processor add the paste ingredients and blend until a smooth paste. To make the curry: 1) Heat a tablespoon of coconut oil in a large saucepan. Add the onions and cook until soft, around 5 minutes. 2) Add the curry paste and fry for 3 minutes. Add the juice and zest of the lime and soft brown sugar. Cook until the sugar has dissolved. 3) Add the stock, coconut milk, soy sauce, rice wine and kaffir lime leaves. Bring to the boil and simmer for 7 minutes. 4) Add the vegetables of your choice and cook for a further 7 minutes. 4) Add the spinach and cook for 2 minutes. 5) Taste to check seasoning and heat - you could add more Soy Sauce or fresh chilli according to taste. Finally, add the chopped coriander and stir so that everything is nicely combined. Sprinkle with peanuts, chopped spring onions, coriander & finely diced red chilli. Schweinegulasch mit Karotten - Es fing alles harmlos an: Bisschen Karotten mit Rosmarin, sehr lecker, die Nudeln etwas verkocht aber noch vertretbar, die Soße zwar ziemlich lasch im Geschmack aber trotzdem eine gute Ergänzung. Dann ging es weiter zum Fleisch: Zunächst war es auch noch durchaus genießbar, wenn auch nicht so zart wie die letzten Male. Dann waren auf einmal nur noch 2 Stücke Fleisch übrig und während das eine wie gewohnt nach quergestreiftem Muskelfleisch aussah, hatte das andere eine Oberflächentextur die man doch eher im Anatomieseminar in Modul 5 erwartet: Eine glatte, leicht faltige Oberfläche, die den geschulten Mediziner auf Anhieb an die Plicae gastricae der Magenschleimhaut erinnerte nahm mir dann relativ schnell den Appetit an dem ganzen. Auch wenn ich pauschal nichts gegen den Verzehr von Innereien habe, brauche ich doch eine gewisse seelische Vorbereitung um sowas zu essen und die war mangels irgendwelcher Vorwarnungen heute nicht gegeben. Bleibt nur die Frage, ob das heute ein Einzelfall war, oder ob die Mensa uns öfter heimlich solche kleinen Leckereien ins Essen mischt.
