salad details--> mixed greens+spinach on the bottom, edamame, onion, tempeh, sauerkraut, sweet potato fries, and 1/2 a serving of hummus mixed w/ garlic powder and a little bit of water to make a dressing+sprinkled some nutritional yeast over the top🥗
Lunchin’ on a big bowl of 🌱 to kick off the weekend & drizzled it all with a maple tahini dressing 😋
Roasted sweet potatoes, onions, & broccoli with cherry tomatoes, chopped cucumber, half a small avo, butter beans & @clekraut
gnargnar kraut (seriously want to eat this kraut by the spoonful 🤤)
Maple tahini dressing: 1 tbsp @seedsofcollaboration
tahini, 1 tsp @lakantosweetener
maple syrup, 1 tsp apple cider vinegar, some garlic powder, pink salt n pepper.

Having some fun on this busy Saturday! Today and tomorrow are my rest days and I went to a team event this morning that was so empowering and uplifting.
How has your Saturday been so far?
🍛 CHICKEN TIKKA MASALA #FAKEAWAY
Can you actually believe you can eat ALL of this for a total of 623 calroies!
Curry = 293 calories
rice = 9 calories
Poppadoms x3 = 111 calories
WeightWatchers naan x1 = 110 calories
Homemade onion bhajis x2 = 87 calories .
Curry recipe below ⬇️⬇️⬇️⬇️
Serves 3 ⚂
WHAT YOU'LL NEED✔
1 lime (squeezed)
75g fat free natural yoghurt
75g light greek coconut muller yoghurt
5 tbsp tikka curry powder
600g chicken breast (diced)
1 white onion (grated)
3 garlic cloves (crushed)
2cm fresh ginger (peeled and grated)
1 red chilli (deeseeded and diced)
60g tomato puree
300ml chicken stock
100g fat free fromage frais
Handful of fresh, chopped coriander
1. 🌠THE NIGHT BEFORE🌠 Mix the lime juice, both yoghurts, 3 tbsp tikka curry powder. Add the diced chicken, toss together, cover and marinate overnight (if this isn't possible then at least 4 hours is required).
2. Spray a large, deep non-stick frying pan with low calorie spray. Add the onion, garlic, ginger, cinnamon, cumin and 2 tbsp tikka curry powder on a low heat and fry for 2-3 minutes.
3. Stir in the tomato puree with the chicken stock and whisk together. Add in another 300ml of water and bring forbthe boil, then simmer for 15 minutes.
4. In a separate frying pan spray some more low calorie cooking spray and place individual diced of chicken in the pan on a medium heat (you may have to do these in batches - you don't want to pour the marinade in the frying pan as the chicken won't get that 'charred/golden brown look).
5. Cook chicken until golden on all sides and then toss into the curry sauce on a low heat to carry on cooking through (around another 15 minutes).
6. Take the sauce off the heat and stir in the fromage frais and the fresh coriander.
7. Serve with anything you like... rice, rice alternatives, chips, naan bread or poppodoms 😜!

had packs of 3 eye of round steaks for under $6 so seasoned that with some pepper and topped it off with balsamic glazed garlic onions and mushrooms.
Added some steamed seasoned zucchini and a mixed green side salad with a teaspoon of sunflower seeds and pumpkin seeds and a tablespoon of @bolthousefarms
Don’t be afraid to get outside of the box when it comes to eating right! Chicken, rice, and veggies is good but it’s not the only way to do it🤤

A brunch spread fit for a king. 🍳 Never experienced a Thai-focused breakfast menu until my visit to @pinto_nyc
and delightfully enjoyed every detail. My dish was the fried chicken and lemon grass waffles which offered a unique taste different from the norm. Plus, that crispy skin was so mouthwatering delicious. the roti-style pancakes were also a sweet surprise. 😍 Certainly a beautiful treat to eat in the West Village! 🤤
I lived a fast food/takeout lifestyle and the produce section of the grocery store was like visiting a foreign country. 😂 Over the years I’ve learned how to live better but it was a process. If you’re looking to eat better and experience more out of your life here are some my favorite kitchen tools to for the journey:
1️⃣ Power blender- I’m partial to Vitamix and it’s Isaac’s fault. When we met 9 years ago I started using it and I’ve loved it ever since. Smoothies, soups, ice cream, salad dressing it does it all and it does it best. .
2️⃣ The Instant Pot - This is such a high value cooking tool. It’s a pressure cooker, slow cooker, rice and quinoa cooker, chili/stew cooker and it does even more. If you’ve been on the fence about Instant Pot - yes, it does live up to the hype...IF you use it. .
3️⃣ Food Processor- I luuuuuv to cook but sometimes I don’t feel like doing all that chopping. Food processor to the rescue! Plus I use it to make these avocado bowls: https://bit.ly/2CsZTId ⬅️ My kids LOVE these! .
4️⃣ Electric kettle - Teas are some of the most healthy beverages we can drink. 🍵 Many are high in antioxidants and health boosting properties. Call me lazy but I’d rather bypass using the stove at the end of the day (when I usually drink tea).
5️⃣ Cookbooks - This is a small selection of the cookbooks I have. When I get in a cooking rut, these keep my cooking game on point and interesting. .
6️⃣ Essential Oils- We use and diffuse essential oils everyday- I apply them to the kids every morning before preschool to boost their immunity. I diffuse them in the house for energy and wellbeing and I cook with them too.
7️⃣Vita Clay Non Toxic Cooker- my favorite for making bone broth. It doesn’t get as hot as a pressure cooker. Too much heat can denature the vitamins and minerals in the bone broth depriving you of some of the benefits. Here’s how I use it to make bone broth: https://bit.ly/2CsZTId

I finally hit up one of the great vegan 🌱 restaurants in Nashville. Have you been to The Southern V? I’m not vegan, I’m actually a vegetarian but it’s nice to go somewhere + be able to eat everything on the menu. Not to mention it was delicious 🤤
Lunch and dinner for the next week!! If got veggies in baggies in the fridge, frozen grapes in the freezer, and little snack boxes of grapes and hard boiled eggs in the fridge as well!
No one ever said meal prep was quick - but do you know how much time I’ll spend next week on eating healthy? About a minute for the microwave to warm it up. 👌👌👌 Dinners are Thai Chicken Thighs with sweet potato and raw carrots.
Lunches are Jamaican Jerk Chicken, shredded on Basmati rice with baked zucchini sticks. Then I threw in a light sprinkling of grated Romano cheese just for some extra yummmm 😋😋 *I may have sampled the jerk chicken... SO YUMMY and not spicy at all. If you like more spice, look for a spicier jerk seasoning!

Adding to yesterday's post regarding my decision to try again with a new day, yesterday was a great day and that includes my nutrition! I stayed on track with my meal plan and felt great alllll day, mentally and physically!
In the past if I had a bad day nutritionally (ate myself sick or ate too much junk) I would have done 1 of 2 things the next day;
a) Thrown in the towel, ate anything and everything for the rest of the week, felt sick, and been mad at myself, then would try again on Monday aka a new week.
b) Tried to compensate for the day before's calories by eating very little, which is no good either!
Man, growth is a beautiful thing. 🙌
