Dinner time 🤤😍 • Yesterday we grilled for Father’s Day and my brother (who is a master at marinating and grilling/smoking any meat by the way..) sent me home with some tequila lime chicken breasts! YUM! Perfect for this fajita taco salad! • Lettuce, avocado, fresh salsa (from Aldi is seriously the best. I put it on EVERYTHING!), chicken, sautéed bell peppers and onions, and sour cream. OH YES. Queen of random meals over here 🤷🏻‍♀️. My thought process when I’m making a meal: ok what carb do I want, what veggie and what protein. And then I throw it on a plate and usually it’s great. Baked broccoli (with a teaspoon of oil) and whatever spices ya like, throw onto a pan and bake at 375 for about 30 mins, flipping half way. Rice cake with natural peanut butter & a giant strawberry cut up, and some rotisserie chicken & dill mustard. Today was gloomy and rainy and had me craving warm, roasted foods for dinner BUT we also have a shitload of lettuce that needed used. So I combined the two and made a big ass roasted salmon and veggie salad for dinner. Baby spinach and romaine topped with roasted salmon, red potatoes, asparagus, and zucchini. Added in some chopped cherry tomatoes and pan-toasted pepitas and sunflower seeds. Dressed with lemon and EVOO. Getting excited!!! Leaving tomorrow for Indianapolis for a coaching conference. . . This time last year I was just starting to take my health more seriously. 1 year later, I am 30 pounds lighter, needing some new summer clothes, and excited to head out of state to learn how I can help change the lives of other people who are looking to get healthier, stronger, and braver - my goal as a health and fitness coach and what I needed last year for myself! . . I’m so excited and a little anxious! I’ll be driving 16 hours up and doing lots of never-done-before things. . . As the summer is progressing though, I am reminded of the growth mindset I continue to encourage my daughter in. I don’t like mushrooms, I don’t like mushrooms, I don’t like mushrooms- and so he continued as P helped me with meal prep. And true to his word, he refused to even taste the mushrooms and, I think, had maybe a bite of the fish. He has soooooo much energy. Any time indoors he can be seen pacing the floor or circling the kitchen island. Often meals happen with him standing by the table instead of sitting at it. I’m not promoting this by any means, but there is a age where they push, I mean really push back hard at meal times. And we have to make a decision to keep offering the mushrooms or just give in. Mushrooms of course are my analogy here and maybe a bad one if like 80% of you also hate mushrooms - but seriously they were covered in #soysauce and #Ghee so who wouldn’t love that (my husband declared them the best part of the meal) but I digress. I try to remind myself that it’s not just about this meal but teaching them about a healthy relationship with food. So while Rea was literally licking her plate clean, P was refusing to eat and I told him it was okay. However, I did leave his plate out and after bath asked him to go take three “big daddy bites” before his show. He happily obliged and got to choose what he wanted which happens to be the rice and not the fish, mushrooms or even the fruit 😵 At bedtime he started his familiar tactic of “I’m still hungry” which every momma knows breaks your heart. But we told him it was bedtime and he needs to eat at meal times. To be honest, I share with you, not because I think this is the best or right way. Because I don’t know and every kid is different. Hey you guys! How are all of you doing? I, myself, am doing pretty well! Once I was done with my apple + PB, I headed out to the grocery with my Momma! There’s still some more stuff we need to get later on tonight, but my sister wanted to come with and he was at water polo practice, so we will head out again once we’re all done with dinner! Since we got back home, we’ve been cleaning up and I’ve been cooking my dinner! I made something (sort of) new tonight, but I’m REALLY looking forward to it! I made my family dinner last night and it was Asian themed, so that’s what I wanted to have tonight! I am having: sautéed chicken breast (in coconut oil spray + pepper + garlic powder + cayenne), quinoa + kimchi, sautéed Brussels + carrots (same seasonings as chicken), and sriracha for the top! 😛🔥💦All I have been wanting are Brussels and I’m SO pumped to try them this way! It was way too hot to have the oven on, so I tried them this way to keep my mom from getting mad. 😂 Overall, I’m feeling okay! I had a KILLER session this morning, I ate everything I was supposed to, I had a great walk + foam-roll session, I got to hang out with my mom, and now I get to eat some dinner and head to Target with my mom and sister later on! Today has been a little tough for me mentally, but I KNOW I’m doing everything I should be to get to where I want to be. I’ve got some journaling to do, a night snack to eat, and some sleep to get! creamy PALEO ALFREDO spaghetti squash with SEARED SCALLOPS for dinner tonight 🍝🙊🙌🏼 . . directions: slice spaghetti squash in half, scoop out seeds, & coat with olive oil. bake on pan lined with foil face down at 425 for 45 min. let squash cool & scrape with fork into pot. mix in @justspices pasta alfredo seasoning (mix of of paprika flakes, garlic, parsley, sea salt, tellicherry pepper, nutmeg, and lemon peel) + coconut milk & cook at medium heat for 10-15 min mixing in @organicgirl spinach. strain & top with sun-dried tomatoes & seared scallops (cook on medium heat skillet with avo oil & dash of pink salt 2-3 min each side) 🤗✨#thefitdelish #feedfeed #paleo #glutenfree #spaghettisquash #whole30 #realfood

I generally like my breakfast to be savory rather than sweet, but this one was so good. Unlike some of the breakfast bowls you’ll see on Instagram, it was TRULY easy to make 😂 (it took a couple of minutes - on weekdays I get lazy about breakfast). Here’s what I used, just throw it all together in a bowl: 0% milkfat Greek yogurt, blueberries, natural unsweetened granola, & natural unsalted peanut butter. . First of all , this photo was never going to be great, the weather here is bloody awful 😔 Secondly i use a phone not a 10k camera so I'm limited to the greatness I can do with a photo 🤣 . So I've been thinking alot lately about what my dad asked me the other day "do you have eggs everyday"? Well I do, almost everyday I have an egg for breakfast, my dad has chooks so this is a FREE source of protein for my family. A cheap meal. A free meal. If I could eat them all day I would. . Is this healthy though? What are the benefits? Yes they are healthy, in fact having up to 3 eggs a day is healthy. Having eggs for breakfast helps boost your energy levels and keeps you fuller for longer so you're not reaching for a mid morning snack. I don't know about you but I definitely need all the energy I can get with 3 young children. Amen for healthy energy boosters 💛🍳❤
