Vietnamese Chicken Noodle Bowl By @recipe_tin 😋👌 Ingredients Meat and Marinade 600 - 800g / 1.2 - 1.6lb chicken thigh fillets , skinless and boneless or breast (or pork, beef or any seafood) 2 garlic cloves , finely chopped or minced 2 tbsp lime juice 2 tbsp fish sauce (Note 3) 1 tbsp soy sauce (all purpose or light) 2 tbsp brown sugar 1 tbsp vegetable oil 1 stalk lemongrass , white part only, bruised them sliced into pieces easy to pick out later (Note 1) Nuoc Cham 1/4 cup fish sauce (Note 3) 4 tbsp rice vinegar 2 tbsp white sugar 1/2 cup water 2 garlic cloves , finely chopped 1 red birdseye chilli , finely chopped (Note 5) 3 tbsp lime juice Noodle Bowl 1/2 tbsp oil 200 g / 7 oz vermicelli noodles , dried 2 carrots , julienned 2 cucumbers julienned (optional: remove seeds) 5 cups iceberg lettuce , finely sliced 3 cups bean sprouts Handful of mint leaves Handful of cilantro/coriander Sliced chili (for garnish - optional) Lime wedges (to serve - optional) Instructions Combine Meat and Marinade ingredients and set aside for at least 1 hour, up to 24 hours. (Note 4) Combine the Nuoc Cham ingredients and mix well to dissolve the sugar. Adjust to your taste (spiciness, lime, sweetness) and set aside. Soak the vermicelli noodles in hot water for 3 minutes (or according to packet instructions), then drain and rinse under cold water to stop the noodles from sticking together. Heat 1/2 tbsp oil in a fry pan over medium heat (or heat the BBQ). Remove chicken from marinade, shaking off large bits of lemongrass (small bits should fall off during cooking). Place chicken in the pan and cook each side until dark golden brown and chicken is just cooked through - about 6 to 8 minutes in total. Remove from pan, shaking off any remaining bits of visible lemongrass and set aside to rest for 5 minutes. Then slice into thin pieces. Cheesy Cauliflower Tater Tots Ingredients: 4 cups cauliflower florets 2 tbsp heavy cream 2 tbsp butter 1/3 cup shredded low fat sharp cheddar cheese 4 egg whites ½ tsp pepper ¼ tsp salt 10 sprays non-stick spray Directions: Clean and trip the cauliflower, adding the florets to a microwave safe bowl. Add the cream and butter to the bowl. Microwave for 5 minutes. Add the cauliflower and cheese to a magic bullet or food processor and blend until still chunky – kind of like a cooked oatmeal consistency. Season with salt and pepper. Chill for the last half hour. Whip the egg whites to a stiff peak. Fold 1/3 of the egg whites into the cauliflower mixture to lighten it up. Then fold the cauliflower mixture into the rest of the egg whites and gently mix until combined. For best results, chill for another half hour or they won’t hold their shape well. Fit a pastry bag with a round or star tube with about ¾ inch opening. Spray the inside of the bag with nonstick spray. Gently squeeze out 1 inch sections onto a greased cookie sheet, cutting with a butter knife as you go. When finished, bake in a 375 degree oven for 10-12 minutes or longer until puffed and slightly browned. Remove from the oven and serve. Sunday = protein pancakes 🥞 🤤 Sunday for me means switching back to normal days after working a stretch of graveyard shifts so I usually don’t eat as much since I napped in the morning after work. I eat these in the afternoon then don’t eat again until the next day ie: a little intermittent fasting. I only ate half of this ( this is actually 2 servings here). They’re about 40g protein per serving so they’re pretty filling. Two eggs, a banana, 1 serving of chocolate protein powder, and 1tbsp ground flax = 1 serving. I put my ingredients in the blender.
