1.5 cups farro rinsed
8 ounces arugula/baby kale or baby spinach
2 corn on the cob
2 zucchini sliced horizontally lengthwise
1 pound asparagus woody ends removed
2 peaches ripe but firm!!
1 cup cherry tomatoes
10 strawberries sliced
1/4 cup fresh basil torn
2 tablespoons fresh mint chopped
2 tablespoons fresh chives chopped
2 cups microgreens optional
3 green onions chopped
1 large avocado pitted and sliced
8 ounces mozzarella Fresh, or burrata
>>FOR THE STRAWBERRY VINAIGRETTE
8 ounces strawberries stems removed
1 tablespoon honey
2 tablespoon apple cider vinegar
2 tablespoons honey
salt + pepper to taste
I love those days when I don't have time to plan what to cook for dinner and have to improvise with what I have in the fridge! It's to be honest my favourite game in the kitchen! Today we have: mixed quinoa, chicken, tomatoes, pomegranate, avocado, chopped parsley+mint, strawberries. All mixed with the lemon juice, avocado oil and pistachio dukkha spice. I used grilled chicken from @BirdsEyeUK

A closer peak at the low country shrimp boil from last night! 😋 shrimp, baby red potatoes, andouille sausage, and corn come together with a little bit of spice and a tons of flavor for this comforting meal.
gets a little easier. I’ve learned to stop ignoring what my body is asking for. I’ve learned to no longer feel ashamed of hunger. I’ve learned it’s ok to not finish a meal, and it is equally ok to ask for another helping.
I still sometimes struggle with numbers. I try to avoid reading labels or focus on how many calories may or may not be in something. There will be times #foodfreedom
comes naturally, and other days I feel like an insecure mess. I embrace any weight gain (or loss). I’m more at peace with my body.
Most importantly, I’ve removed my diet mentality and stigma. I’ve stopped micro-managing my meals. Not everyday is easy, nor do I know what I want to eat everyday...But it’s getting easier.
Intuitive eating is helping me become a better eater and person. If you’re in the middle of this journey, hang in there. It will get easier. You can do this.

Se li hai appena comprati freschi capisci che ti sarebbero serviti congelati per la decorazione. Tra 10 minuti. Se li hai congelati in freezer realizzi che ti servono assolutamente freschi e succosi. Insomma almeno costassero poco sti frutti di bosco! E invece no, due euro a cassettina quando va bene (Azienda Sant’Orsola, quelli locali nemmeno mi azzardo a chiederlo il prezzo). Corollario: voglio un cespuglio di more nel giardino che non ho! 🇺🇸Can we talk about Murphy law in food photography for a minute? I’m talking about berries. Berries are expensive, hard to find in grocery or fruits shop, and easily to spoil. And, let’s be real, if you are shooting some dessert you always find out you need some berries as decoration in the moment you’re at the camera, not the day before. Or you actually bought the berries, but while shooting you realise that ehi… some FROZEN berries would have been the perfect garnish. But you only have them fresh. How annoying is that? The only ingredient as troublesome as berries is… fresh mint!! Ok I want a garden. With fresh herbs and def fresh berries plant! •

This energy giving breakfast is also so lush at this time of year when added to so leftover PYO summer fruit followed by a topping of chopped banana and nutrient rich seeds. I like mine chilled in the fridge over night with coconut milk or hazelnut milk before adding the toppings! How is your breakfast looking this morning?
Get your super crispy Erhai shrimp here! Though not nearly as big and juicy as shrimp from the sea, these mini shrimps make up for it in freshness and a delicious crunch. Because they are so small, these shrimpies are usually deep-fried first before stir-frying with fragrant garlic chives and of course, the always-present dried chilis to give it a kick.

Family dinner at my parents’ house tonight was the most comforting and delicious low country shrimp boil. 🍤🥔🌽 Growing up, my family spent so many evenings cooking together and some of our best memories are made during that time in the kitchen. So when we get to jump back in and all get together in the kitchen, I’ve never felt so at home! 💕
Oh snap, a food photo that’s not pizza? The best paella I’ve ever had was from this small Spanish store in a street in Aix-en-Provence. This version I made wasn’t as amazing but it pretty damn good❤️

First fig from our new tree and wow she was...huge. Baseball sized, in fact. 😳Surprisingly still sweet and not the least bit mealy - so we celebrated with just a simple drizzle of honey, black lava salt, feta lavender and mint. Can’t wait for the rest of them to ripen - what’s you’re go to with figs?! I’m definitely thinking there’s a savory Fig pizza in our future...
I just simply can’t handle how awesome it is to cook fresh produce. No really, I can’t, so I’ll just have to list out what we ate tonight 😋
Stewed veggies, all from local gardens (farmers market, my garden or my family’s gardens): tomatoes, garlic, onion, bell pepper, jalapeño, squash, field peas, corn, dried basil, stewed together with chicken stock and a little splash of white wine and reduced until it formed a thick stew. Chase seared up some Springer Farms chicken breasts with a local spice rub and y’all, it was just so good. I will take the crazy humid Nashville heat if it means I get to eat like this all day every day!!! .
