Two Minute Mayo recipe on the blog and it does exactly what it says on the tin... makes mayo in two minutes. I dare you to test it!

I love creating new and exciting recipes when I'm cooking with little handed helpers, and this is a perfect recipe to cook with kids (or big kids). 😁🍩
You can personalize each Cheesecake Bite with any topping that takes their fancy.
Ingredients (to make 6)
300g vanilla yoghurt
3 gelatin leaves
4 triangles of @thelaughingcow_uk
1 tbsp icing sugar
(for the base)
6 crushed biscuits of your choice
40g unsalted butter, melted in microwave for 20 seconds
First prepare your muffin cases by placing them into a muffin tin.
Crush your chosen biscuits with the end of a rolling pin in a bowl. When completely finely crumbled, add your melted butter and mix until completely combined. Add to your prepared muffin cases, remembering to press down hard so it creates a hard biscuit base layer. Pop in the fridge for 5 minutes.
While the biscuit bases are chilling, make the Cheesecake filling.
In a small saucepan, add your milk and gelatine leaves and leave to simmer until the gelatin as completely combined.
In a separate bowl, add the rest of the ingredients together and then add the warmed milk. Stir again.
Leave to stand for 10 minutes and then get our your muffin tray. Add your Cheesecake mixture to the biscuited muffin cases. Fill to 3/4 of the way.
At this point, add any extra toppings. I added blueberries, sprinkles and jam. Pop in the fridge again for 1-2 hours. The most scrumptious #dinner
Gorgeous red and golden beet tortillas, pickled beets and red onions, Mexican black beans and fajita style veggies.
For the tortillas: @bobsredmill
whole wheat flour, @simplyorganicfoods
cumin, turmeric and coriander powder, sesame seeds, freshly grated ginger, olive oil, salt to taste, add fresh herbs (I used cilantro, mint and basil), add freshly grated red beets for one batch and golden beets for the other, slowly add hot water until the mixture comes together (should resemble dough, not sticky). Let the dough rest for about 30min. Roll into disc like shapes and cook on a flat pan.
For the fajita veggies: thinly slice red bell peppers, red onions, beets and chopped cauliflower. Add cumin, coriander, smoked paprika, a little cinnamon and turmeric, salt/pepper to taste into a pan, sauté with @spectrumorganic
canola oil until nice and translucent.
For the Mexican black beans: drain and rinse can of @edenfoods
black beans, add a little canola oil to a pan, add cumin, coriander, turmeric powder, add black beans. Once warmed through add salsa of your choice. Cook the beans until nice and bubbly. Try to burn off most of the moisture in the beans before serving.
For the pickling: add thinly sliced, red onions and beetroot to red wine vinegar. Let it marinate for 30-45mim or longer.
Assemble all of your deliciousness, add cheese and or sour cream if desired!

I’m not one for diets, I generally try and stop eating when I’m full and stay in a good relationship with exercise. Simple. ⠀
The stop eating when your full is easier said than done, and for me in winter - difficile!! It beats saying no to treats though, diets suck and there is no need. Listen to your body and serve yourself smaller portions. 😉 she says!! ⠀

Sunday plans: good food, good friends and fun. Have you ever made Shakshuka eggs? Basically poached eggs in a spicy tomato sauce. Hard to say but easy to make and tastes amazing! You can pull this together with what you’ve got in the pantry.
It’s a perfect excuse to have friends for brunch. Not that you ever need an excuse!

I’m not sure we (collectively) deserve Marcel&Sons - its vegetarian Jai (rice, chayote, glass noodles, fried tofu skin, wood ear mushrooms, a perfect egg and the spiciest hot sauce out there) or Bol Renversé (with Mauritian sausage) will set you back £5 and are generously portioned, filling and delicious. train! As someone who struggles with IBS on a daily basis, I am constantly having to determine which foods are causing me pain since my body can’t digest them. Whole30 is the perfect way to eliminate inflammatory food, eat only what is wholesome and nutritious, and let my digestive tract reset. Although I already try to stick to a pretty clean diet, if you know me at all you know I’m a smoothie and peanut butter ADDICT.. which are both off limits on the program. And don’t even get me started on my love for IPAs! Needless to say it’s gonna be hard but I can’t wait to see the effects eating this clean will have on my mind and body over the next 30 days! 🥦🍳🥗🥩 Today’s whole breakfast was a brunch salad tossed in Dijon vinaigrette made with @primalkitchenfoods
