Gourmet 🍃‼️VEGAN lentil sweet potato CHICK pea stew 🙌

¼ cup extra virgin olive oil, plus extra for drizzling
3 French shallots, thinly sliced
1 tbsp finely chopped rosemary sprigs
1 medium sweet potato, chopped into 3cm pieces
1 cup French green lentils
750ml vegetable stock
1 tin of chickpeas, well-drained and rinsed
baby spinach, to serve
Heat oil in a large saucepan over medium heat. Add the shallots and rosemary sprigs and cook for around 3–4 minutes to soften. Add the sweet potato and cook for a further minute. Add the lentils, the stock and enough water to submerge the vegetables by 3–4 cm.
2 Simmer on medium-low heat for around 35–40 minutes or until the sweet potato is soft and the lentils are cooked. Add the chickpeas in the last 10 minutes. Season to taste.
3 Transfer to a large serving bowl and top with plenty of baby spinach and a drizzle of extra virgin olive oil. Serves 6.

🤤 Today a friend of mine and I had lunch there and it couldn't be more tasty, yummy and absolutely delicious. They have an excellent and wide menu and this is what we ordered: vegan chilli, vegan burrito, lentils soup cooked with coconut milk and turmeric and served with fried banana, brown rice, falafel and salad, and finally vegan hot dogs. Excellent service, flavors, deeps and prices! The place and its atmosphere is really nice as well. Congrats @lentejaexpress

2 tbs of olive oil
1/4 cup of minced red bell pepper
1/4 cup of minced yellow onion
1 1/4 cup of chikpeas
1 14 oz package of hearts of palm
2 tbs of ground walnuts
2 tbs of vegan mayo
2 tsp of stone ground mustard
1 tbs of dill
1/4 tsp of pink himalayan salt
1/4 tsp of black pepper
Sprinkle of cayenne
Whole wheat buns
Sliced vine ripe tomatoes
Sliced red onion
Sauce of choice
Baby dill pickles
In a pan on medium heat add olive oil, red bell pepper, and yellow onion. Cook for 5 minutes. In the meantime mash all chikpeas and add to pan. Cook for another 5 minutes and set aside.
In a bowl squish all hearts of palm until crab like meat starts to form. Once all are squished combine with chikpea mixture.
Preheat oven to 375°. Add remaining ingredients into patty mixture and knead until all ingredients are well combined.
Form mixture into desired sized patties and place in oven for 10 minutes each side. Once time is up remove from oven and allow 5 minutes to cool.
In a pan on medium heat add patties and cook for 3 minutes each side. Once ready place patties on buns along with toppings. Use sauce of choice (we used a remoulade sauce) and enjoy.
Thoughts on food prep!! I eat lots of produce, but I have to make it all ahead of time if I actually want to eat it. I even wash berries and tomatoes. I tend not to think about food much until I'm quite hungry, and then I don't have the patience or time to prepare produce. But if it's already made, it's easy to grab a few handfuls of fruits and veggies for each meal and snack. And there is no shame at ALL in buying prepared produce if that's what helps you eat it!
(This is about 70% of the produce I eat in a week / ten days. It's not all in the photo!)
The second picture shows my second tip for eating produce - keep a list of what produce you have on the fridge! Then you don't have to dig through to see what's left. When you finish something, cross it off. This has been a huge help to not wasting food I used good money and energy to prepare!

ANYWAYS! How to spruce up your nourish bowl/salad 101- add a variety of roasted vegg and diff greens!!! Seriously, the sky’s the limit when it comes to greens, raw vegg, healthy fats, carbs, proteins... you could make a diff bowl every damn day if you wanted! I never get tired of these cuz it’s SO easy to mix it up. Try for 4 colors, and have fun with it! It’s my go to meal, and leaves me feeling satisfied every single time. #eattherainbow
