The not so great feelings come into play when I know that these peppers, and the squash and apples (also YUM) mark the end of delicious and abundant summer produce.
I love to eat local, in season produce and products for as much of the year as I can! This year, I have been trying to stock up and freeze some of my favourites for some mid-winter reminders of just how good we had it back in July when the blueberries, raspberries, zucchinis and SO much more were at their best! .

, & for not being much of a pasta lover (neither for the gluten-filled nor gluten-free varieties), I was pleasantly shocked at how delicious it was. Not to mention quick & easy, pasta never even enters my radar when I’m pondering dinner options, but that will all change from now on. I seem a bit old to be discovering (wildly untraditional) pasta at 31, but hey, better late than neeeeeever.
I used a recipe inspired by @jescoxnutritionist

Laksa is a winner in our house. Its a hearty way to way to warm up on a cold day. Despite it being Spring on our side of the planet, Winter apparently had one more thing to say, so made a cool comeback today.
Laksa is a spicy, creamy broth thick with rice noodles and rainbow veggies.
We like our Laksa spicy. My Laksa paste could not be easier :
8 long red chillies
2 teaspoon ground coriander
1/2 teaspoon sweet paprika
1/2 teaspoon ground cumin
1 teaspoon ground turmeric
1 brown onion, chopped
2 fresh lemongrass stalks, white part only, chopped
3cm piece galangal, peeled, chopped
6 macadamia nuts
2 garlic cloves, chopped
1 tablespoon peanut oil
Place everything in your food processor and process until finely chopped. Add oil. Process until a smooth paste forms. Refrigerate in an airtight container for up to one week. It can also be frozen in ice cubes ready to use when the craving hits.
