Gourmet 🍃‼️VEGAN lentil sweet potato CHICK pea stew 🙌 FOLLOW us @veganfoodbible RECIPE - Ingredients- ¼ cup extra virgin olive oil, plus extra for drizzling 3 French shallots, thinly sliced 1 tbsp finely chopped rosemary sprigs 1 medium sweet potato, chopped into 3cm pieces 1 cup French green lentils 750ml vegetable stock 1 tin of chickpeas, well-drained and rinsed baby spinach, to serve Method- Heat oil in a large saucepan over medium heat. Add the shallots and rosemary sprigs and cook for around 3–4 minutes to soften. Add the sweet potato and cook for a further minute. Add the lentils, the stock and enough water to submerge the vegetables by 3–4 cm. 2 Simmer on medium-low heat for around 35–40 minutes or until the sweet potato is soft and the lentils are cooked. Add the chickpeas in the last 10 minutes. Season to taste. 3 Transfer to a large serving bowl and top with plenty of baby spinach and a drizzle of extra virgin olive oil. Serves 6.

Amazingly delicious lettuce wraps! Homemade with many fresh ingredients from the garden! Can't get more local than that lol. When you combine wholesome ingredients the result is so tasty and doesn't feel like you're missing anything. . I used grilled pre-seasoned tempeh (organic fermented soybean), romaine lettuce, tomatoes, green onions, parsley, bell peppers, sautéed mushrooms and homemade Tzatziki sauce. You can add other items like avocados, zucchini or any other veg. . This is a great summer meal or appetizer. Full of fiber, vitamins and minerals. Use blanched collard greens or swiss chard as an alternative to romaine lettuce. Happy eating! . . . . Infamous KRABBY patty 😁🙏🏼 FOLLOW Us @veganfoodbible RECIPE- Ingredients- Patty- 2 tbs of olive oil 1/4 cup of minced red bell pepper 1/4 cup of minced yellow onion 1 1/4 cup of chikpeas 1 14 oz package of hearts of palm 2 tbs of ground walnuts 2 tbs of vegan mayo 2 tsp of stone ground mustard 1 tbs of dill 1/4 tsp of pink himalayan salt 1/4 tsp of black pepper Sprinkle of cayenne Toppings- Whole wheat buns Baby arugula Sliced vine ripe tomatoes Sliced red onion Sauce of choice Baby dill pickles Method - In a pan on medium heat add olive oil, red bell pepper, and yellow onion. Cook for 5 minutes. In the meantime mash all chikpeas and add to pan. Cook for another 5 minutes and set aside. In a bowl squish all hearts of palm until crab like meat starts to form. Once all are squished combine with chikpea mixture. Preheat oven to 375°. Add remaining ingredients into patty mixture and knead until all ingredients are well combined. Form mixture into desired sized patties and place in oven for 10 minutes each side. Once time is up remove from oven and allow 5 minutes to cool. In a pan on medium heat add patties and cook for 3 minutes each side. Once ready place patties on buns along with toppings. Use sauce of choice (we used a remoulade sauce) and enjoy.

Thoughts on food prep!! I eat lots of produce, but I have to make it all ahead of time if I actually want to eat it. I even wash berries and tomatoes. I tend not to think about food much until I'm quite hungry, and then I don't have the patience or time to prepare produce. But if it's already made, it's easy to grab a few handfuls of fruits and veggies for each meal and snack. And there is no shame at ALL in buying prepared produce if that's what helps you eat it! . (This is about 70% of the produce I eat in a week / ten days. It's not all in the photo!) . The second picture shows my second tip for eating produce - keep a list of what produce you have on the fridge! Then you don't have to dig through to see what's left. When you finish something, cross it off. This has been a huge help to not wasting food I used good money and energy to prepare! . Additional photos of meals, and one of my favorite kombuchas. I'm thinking of making kombucha myself... Any tips from those who have done it before? . A shout-out to my friend @lesabradfordyoga who took me to the store when I was tired and had no food and then hung out while I prepared produce. .
