I’m taking you on a journey to 1 of my MOST POPULAR posts from last year 🤸🏻♀️ because I think they are the PERFECT example of how a little kitchen creativity can turn an ‘undesirable’ #food
into something that’s not only #delicious
but functional TOO 🤗.
So what have I done 🤔 Well I’ve basically taken the classic #marshmallow
& turned it on its head 🙃 Revamping it as #refinedsugarfree #sweettreat
that supports optimal digestive & skin health....CLEVER HEY 😁.
below for you guys & yes although they aren’t entirely #sugarfree
the balance of the other ingredients WILL slow the release of that sugar into the bloodstream (which is why I’ve also adding the extra bits & pieces within the squares too 👌🏻) Find the full #recipe

1c cold water.
3 tbsp #organic #grassfed
beef gelatine .
1c @beekeepers_naturals #honey

2.5 c nubbly bits of choice, I’ve used @rawgorilla
Raspberry Crispies but you could use nuts, seeds, buckwheat etc.
1.5 c coconut chips.
Add 1/2 c water to a large glass bowl, sprinkle over the gelatine 1 tbsp at a time, stirring to avoid clumps. Add the collagen, mix again & leave to one side.
Add the other 1/2 c water & honey to a small pan, bring to a gentle simmer, then leave to very gently reduce to a caramel for ~10mins.
Slowly dribble the caramel into the gelatine mix with the salt, beating with an electric whisk (you could do this in a stand mixer if you have one). Continue until you have added all of the caramel, then continue to beat for 8-10 mins until you have pillowy white cloud of loveliness.
Fold through your chosen textural bits then transfer to a parchment lined brownie tin. Pop into the fridge for at least 3 hours.
Turn out & cut into squares with a sharp knife. Wrap in paper to store in the fridge or devour immediately.
Will keep for 4 days.
