For me, the kitchen is my happy place.
It’s where I go to create, relax, find answers, let go, experiment, recharge, meditate, connect.
There are no words to explain the alchemy I see and feel in the midst of it all: fresh ingredients, cooking methods, tools and appliances of convenience, the final plating, family and friends around the table and myself.
All I know for sure sure sure is this: if I’ve fed you, I love you. xo

When I was a kid, beef and noodles was my favorite meal. My great-grandmother would always make the noodles from scratch, then mix them with a can of condensed soup and some leftover beef. They were perfection.
I’ve cleaned up the recipe somewhat - no canned soup at my house. I use our roast leftovers and supplement the pan juices with beef broth. I don’t make my own noodles, but I’ve found kluski noodles are pretty close to what I’m going for. Cook the noodles in the broth and by the time the noodles are tender, the starch has thickened the broth to a rich gravy. Add a hunk of crusty bread and as much pepper as you can handle. It doesn’t get much more comforting than this.

Something I do Monday nights (once monthly) is sneak out and co-teach cooking lessons. My hubby puts baby Jasper to bed, while I get a night out (yippie!).
Two years ago, before baby, I started out as the dishwasher at these cooking classes, but I slowly jumped in sharing bits and pieces of nutritional facts.
I love it, the participants love it! We eat good food and have good laughs. Last month the participants we arguing about who was going to get their name on the signup sheet before the class sold out again. •
Can’t wait for next Monday night!
Asked the Lord to use me this morning to be a blessing wherever I go. He did. Today at a breakfast rally we prayed for Governor Abbott. But that’s not all. While standing near the breakfast tacos & O.J. table a woman asked me if I was Mexican, I said, “How could you tell?” In a nutshell - We shared stories and...boom - relationship. She told me her lease would be up soon and she needed to make a tough decision about whether to move to Bastrop or remain in Austin. I told her that I’d love to pray with her immediately after the rally ended. When the rally ended we moved to a quiet spot where I placed my hand on her shoulder and asked God to give her discernment regarding the move and more importantly to find her a church home where she would thrive in community with other believers - because she was currently not attending. We shared numbers and I told her I’d her ask around if anyone knows of any bible churches in Bastrop. Isn’t God so so good and so so kind?
Oh, and as the Governor rolled passed us in his wheelchair to leave he pointed at us and said, “Keep praying for me.” It must be important to him, so please pray for him. Nom mac n cheese topped w crispy yams #veganmacncheese
200g GF pasta cooked al dente
250 g yams sliced
1x vegan stock cube
parboiled w stock cube, drain and then fried till crispy
Save the yam and stock water for no-cheese sauce.
Nom no-cheese cheese Sauce:
12 big white mushrooms sliced
1 x leek stalk finely sliced
1/3 onion very finely sliced n diced
7 garlic cloves finely sliced
1 heaped tspn paprika
1/2 tspn cumin seeds
1 cup cashew nuts
1/2 cup nutritional yeast
3/4 cup Angel food cheesy sauce mix DF
1/2 cup Coconut oil
Salt n pepper
Soak cashews in rice milk overnight. Add nutritional yeast, coconut oil, salt n pepper, angel food cheesy sauce mix and yam water. Whizz till smooth (Dont worry about coconut oil texture it will smooth out further when cooked.) In a frypan add either olive or coconut oil and fry off mushrooms and leeks, as you see them start to cook down add onions n garlic. Add paprika n cumin seeds and fry all down till mushrooms are nice and brown. Add cashew mixture and stir all through. Add more rice milk if you need a smoother consistency.
Once done stir through pasta and top w crispy yams #nomnomnom
