My life is crazy, and I love every minute of it! . Not long ago, I was mapping out my path to advanced nursing degrees 👩🏼‍⚕️ like many of my colleagues. But something about it just didn’t feel right. So instead of putting my head down and pushing on, I stopped and listened. I followed my heart down a very different path. . See, I reached a point in my nursing career where I felt like I didn’t want to do it anymore. Too many shifts a week of 12+ hours filled with turning and pulling patients and running 🏃‍♀️ back and forth like crazy had taken its toll on me. Even after the best days I dreaded going back for my next shift. I needed a change. . We had big dreams for our farm to help feed our family and community, to be a refuge for those who so desperately need that healing connection with our Earth 🌏. And I knew that my heart for nursing was really in helping my community stay healthy, not in nursing them back from the brink in an ICU. . Then something clicked. A few years ago I had purchased this little kit of oils 💧 and it came with a business opportunity following a network marketing model. These oils have been so valuable along our family’s wellness journey, and I could earn an income to put toward this life we were building that would better align with our hearts’ desires. . This job doesn’t trade dollars 💵 for hours ⏰ like every other job I’ve ever had. It pays me for helping others along their own wellness journey and toward their own vision of purpose and abundance. Because I chose to pursue this business, I’m able to do more of what makes my heart sing. . In just over a year, this little essential oils 💧 business has went from 0 to grossing a little over $100,000 in sales. That’s a whole lot of people joining this wellness journey! And a whole lot of personal and family freedom to do more of what we love and more to help in our community. . ♥️Gluten FREE, Vegan Lasanga♥️😋 Ah, it feels so good to eat food that doesn't cause inflammation, diabetes, and many other disease linked to the S.A.D = Standard American Diet. . Funny how that spells that huh?! 🤔 Any who, here is an easy, quick recipe for those who want to eat for FUEL and wellness without harming our eco-system! 💪🏾💥 👉🏾Preheat oven to 350 degrees 👌🏾 👉🏾In a saucepan, add a couple dashes of oil(I used sunflower🌻) and turn the heat up to medium. 👉🏾Cut onion slices and let them cook in the saucepan for 2 minutes and add JACKFRUIT into the mix with your choice of an organic pasta sauce. Optional: Add salt and pepper. Optional: Add some Kale or any greens to the sauce for extra health benefits! ✨Jackfruit is full of nutrients like Vitamin C & A plus minerals like Zinc and Iron. It's such an AMAZING meat alternative without the torture and execution of slaughterhouse animals. 😊 👉🏾Once fully cooked, set aside. In a bowl, mix about 2 cups of your choice of vegan mozzarella cheese with lots of Italian seasoning and garlic powder. I recommend @miyokos_kitchen for a cheese alternative. 😏 👉🏾In a deep dish or Lasagna pan, cover in oil, and add some of your Jackfruit, onion sauce. 👉🏾Place a couple of DeBoles Brown Rice Lasagna sheets over your sauce. With no school today, it was VERY tempting to stay in bed, BUT I didn’t. I got up and got it done and then headed to my Rheumatologist appointment. Three months ago I was in a flareup and kind of miserable. The doctor made some changes and I’m happy to report that this visit was MUCH better. I’m officially back in remission. I can tell it too. There’s a distinct miserable feeling versus feeling great feeling. I prefer feeling great! Yellow split pea & root vegetable stew. Yesterday, I stopped at a local grocery store to check out their "discount produce" shelf where I always seem to find perfectly good fruits & vegetables there, & many times they're organic & completely indistinguishable from the regularly priced goods. I couldn't believe I found a large package of soup veggies for $1.73! It contained: an onion, 2 carrots, 1 parsnip, 2 potatoes, a turnip, a small bunch of parsley, & 2 stalks of celery. This was the perfect opportunity to whip up a batch of warm, comforting stew on a chilly Sunday afternoon! I also used some yellow split peas I purchased for $1.99 at my favorite local discount grocery store. But I ended up only using half the bag of peas, some dulse flakes, garlic & a strip of kombu I had in the pantry. Those items probably were another 20 cents, bringing the grand total to $2.92 to make over a gallon of nourishing & healthy stew! That entire pot was enough for 8 LARGE servings! It only took me about 15 minutes to prep the veggies and start simmering the trimmings for broth, with a total cook/prep time of an hour! If you're skeptical of those prices, check out my Instastory to see the prices tags for my ingredients! Recipe: makes ~8 large servings Ingredients: 1 medium diced onion 2 large thinly sliced carrots 1 large diced parsnip 2 medium diced potatoes 1 large diced turnip 2 stalks of diced celery 1 small bunch of stemmed and chopped parsley 1 strip of kombu 2 Tbsp dulse flakes 3 garlic cloves 1 lb of rinsed yellow split peas Prep vegetables, reserve peels & trimmings to add to 2 quarts of water in a medium saucepan with kombu and dulse flakes. Bring to a boil, reduce to simmer, & cook for 20-30 minutes. Strain solids from broth and keep warm until ready to use. Add onion & celery to a large stock pot, adding 1/4 cup of broth to prevent burning and sticking. Add carrots and parsnips, cook for 2-3 minutes. Add the remaining vegetables & split peas to the pot & cover with remaining broth. Add additional water if necessary to keep contents submerged & simmer for 20 minutes until peas and veggies are softened. Remove from heat & stir in parsley.
I went through life wanting to please everyone that I met. Do you do things that makes other people happy, and not always yourself? I was a people pleaser 🙋🏼‍♀️ I lived in fear of others opinions 🙋🏼‍♀️ I was terrified that I would hurt someone’s feelings 🙋🏼‍♀️ Year 31 of this journey called life, I realized that I wasn’t doing things that gave ME joy or happiness. Ever feel like that? I knew that I was meant to help others; other than saving their teeth one at a time 🤣. Any other dental hygienists out there?! Every hour was repetitive. Same small chit chat with each patient. Essentially no excitement and I was looking for another way to fulfill the feeling of helping others 🤸🏼‍♀️! I finally CHOSE to go outside the normal life of living 9-5 and try something that I KNEW others would have an opinion on. It’s so scary to do something out of the norm eh?! It wasn’t easy, but I knew that only I could change my feelings and start creating a lifestyle I was excited about!!! Aaaaaand truth be told, no one was paying my bills but me 🙌🏼!! Since I got started with this incredible opportunity of connecting with like minded women, and my life has completely taken a turn! A POSITIVE turn 🤟🏼!!! 💫 I have made friends from the west to the east coast of Canada 🇨🇦 AND even in the states 🇺🇸!!!! 💫 I’ve learned to focus on the positive no matter what life throws at me 🤘🏼 💫 It’s given me and Brad so many experiences that we would have been more financially strapped to do (such as purchase Trigger 🐶, pay for his vet bills, golf club set ⛳️, work 3 days a week with my career, and now going to Vegas!!!) None of that ☝️ would have been possible if I wasn’t open minded. If I didn’t ask questions. If I didn’t just TRY something new. Wishing you had women just like you and me to connect with?! Tired of being bored, sick and tired? Keep thinking 🤔 you deserve to live a more positive lifestyle? Always wanted to make a second stream of income to cover the FUN things in life? My household has spent last week and the weekend sick! So today, I made some pork rib broth and put a soup together at the end with inspiration from the Whole Life Nutrition Cookbook by @nourishingmeals and @tommalterre. Here’s part ✌🏼of this week’s #mealprep 🍽 Ground Turkey Enchilada bowls made in the crockpot! Plus they’re naturally low carb and high in protein 💪🏼 . INGREDIENTS: ▪️1 tbsp. olive oil ▪️32oz 93% lean ground turkey ▪️1 white onion, diced ▪️1 green bell pepper, diced ▪️10oz red enchilada sauce (mild or medium) ▪️15oz can reduced sodium black beans, rinsed and drained ▪️14.5oz can Hunt's diced tomatoes (I used the Sweet Onion flavor) ▪️1 cup frozen corn ▪️2 tbsp. chili powder ▪️1 tbsp. ground cumin ▪️1 tsp garlic powder ▪️1 cup Mexican Taco shredded cheese . DIRECTIONS: 1️⃣Heat the oil in a pan on medium heat. Add the ground turkey and diced onion and cook until the turkey is no longer pink (~10 minutes). Add the cooked turkey and onion into the bottom of the Crockpot 2️⃣Add the rest of the ingredients into the Crockpot and mix thoroughly 3️⃣Cook on low for 2 hours or on high for 4 hours 4️⃣Top with shredded cheese before .
