Puede que os suene raro pero... GACHAS DE CALABAZA con plátano y crema de cacahuete😵🎃🍌🥜 . Ayer hice una calabaza al horno que me dio mi madre estas Navidades y aún la tenía rodando por la cocina . Es la primera vez que tengo en casa y es enorme, con lo que voy a tener que meter la calabaza en cada plato si no quiero que se ponga mala🤣 . Así que ayer pensé en hacer esto😅, en lugar de avena, he puesto en un cazo la calabaza triturada con un tenedor, he añadido bebida vegetal y esencia de vainilla. He mezclado todo bien y removido hasta que ha empezado a hervir (vamos igual que si fueran gachas de avena) . Os juro que he acertado😋😋 . 🌿 Mushroom & Walnut Paté (VG-GF-SF)🌿 🔴As a mother who is committed to a healthy diet, snack is a challenge! But there are options !! There is more life beyond the avocado sandwiches, hummus ... they are very good! And they are great! But if we do not add more options, they can become repetitive and boring. To add one more option to snacks for kids, and not so small, today's proposal: a vegetable pate based on mushrooms and nuts. No tofu, no preservatives, no thickeners. Only nutrients and flavor! You can make many combinations, playing with the ingredients: changing the mushrooms for shitake, for example; or modifying the nuts by almonds, cashews ... Each one to your liking!There goes the recipe: 200 gr of mushrooms 1 tablespoon of AVOE 1 tablespoon of sesame oil 1 Tablespoon of Tamari 100 gr of nuts Cut the mushrooms and sauté over medium high heat along with the oil (olive and sesame), a couple of minutes. Add the tamari and cook a couple more minutes. Beat together the walnuts and keep in an airtight glass jar in the fridge. 🔵Como madre que apuesta por una alimentación saludable, la merienda es todo un reto! Pero hay opciones!! Ahí va la receta: 200 gr de champiñones 1 cucharada de AOVE 1 cucharada de aceite de sésamo 1 cucharada de Tamari 100 gr de nueces Cortar las setas y saltear a fuego medio alto junto con el aceite (oliva y sésamo), un par de minutos. So I came up and I prepared this beautiful blue chia pudding which I have baptized as "Aguamarina Chia Pudding" for its beautiful color. And hey! It will be true, because I have eaten it with pleasure and it has been so attractive, that the little ones in the house did nothing but ask me for a spoonful more. They have baptized it as the "Pudding of Chia Smurf" 🤣 Recipe: 6 teaspoons of chia 1 teaspoon of hemp seeds Milk and coconut iogurt 1 teaspoon of blue spirulina Toopings: blueberries, nibs, coconut and pomegranate. 🔵Dias antes, leí la importancia de introducir colores nuevos y llamativos en nuestra alimentación. So, I did a NorCal ➡️ SoCal road trip (8ish hours) today and I did not prep and pack these delicious egg bites for the road. Instead, I threw together two also pretty delicious sandwiches in 5 minutes last night (🥑 tzatziki, 🍅, 🧀) & ( 🥜 butter + chia seeds) and called it a day. But, these egg bites make for a WAY better pic! . . Make them! 1. Preheat oven to 350. 2. Chop then sauté onions, broccoli, mushrooms, red peppers & peas in a little olive oil. 3. Whisk 6 whole eggs + 3 egg whites in bowl. 4. Add a bunch of chopped spinach to bowl and mix with eggs. 5. Add sautéed veggies to muffin pan (divide up evenly). 6. Distribute spinach + eggs evenly. 7. Add a sprinkle of Parmesan cheese to each. 8. Bake for 20ish minutes until firm in the middle. Photo #1 is a big bunch of broccolini in a pan ready to be sautéed in olive oil and garlic. Within just a couple of minutes you can see in photo #2 how that seemingly big bunch wilts down to a very manageable portion. At the end I added a pinch of salt, pepper and crushed red pepper. You could also add a squeeze of fresh lemon juice at the end or some minced preserved lemon. Yum. Broccolini is this easy to cook and so good for you. No excuse not to eat a lot of greens every day. I had the best channa masala (Indian chickpea dish) out last weekend so I was ready to try and make my own! First time making it and it’s good, going to add more spice next time. 🌿 Chocolate Mousse with Aquafaba (VG-GF-SF)🌿 🔴150 m of Aquafaba 5-6 drops of lemon juice 200 gr of black chocolate of pastry 1/4 teaspoon of pink salt from the Himalayas (or any other salt) Beat the aquafaba at medium power for 2 minutes with the rods. Add the lemon drops and beat for 5 more minutes increasing the power progressively. Beat until there is a firm foam to the point of snow. Melt chocolate in a bain-marie and pour into a large bowl. Add 1/3 of the beaten aquafaba to the chocolate to noeve. Remove with a rod. Add the rest of aquafaba in two courses, incorporating it delicately with the help of a spatula. Pour into the containers and put in the refrigerator, resting, 2 to 4 hours before serving. It is kept several days in the fridge. 🔵 Mousse de Chocolate con Aquafaba 150 mo de Aquafaba 5-6 gotas de zumo de limón 200 gr de chocolate negro de reposteria 1/4 de cucharadita de sal rosa del Himalaya (o cualquier otra sal) Batir con las varillas durante 2 minutos la aquafaba a potencia media. Agregar las gotas de limón y batir 5 minutos más aumentando la potencia progresivamemte. Batir hasta que quede una espuma firme al punto de nieve. Fundit el chocolate al baño maria y verter en un recipiente grande. Incorporar al chocolate 1/3 del aquafaba batido a punto de noeve. Remover con una varilla. Añadir el resto de aquafaba en dos tandas, incorporándolo con delicadeza con la ayuda de una espátula. Verter en los recipientes y poner en el frigorífico, reposando, de 2 a 4 horas antes de servir.
