Bok Choy I feel like we never talk about it. Which is sad considering how nutritious it is! Between the typical good source of vitamins like A, K, C and folate. It also has shown to combat free radical damage and reduce risk for heart diseases. ☺️
I used my Bok Choy in this bowl and it was 👌🏽👌🏽 All I did was add in 1/2 a red onion and 1/2 cup mushrooms on the pan I caused you. 🍄 Once the onions and mushrooms are cooked down, add in seasonings as preferred (I went with 1/4 tsp garlic powder, 1/4 tsp Trader Joe’s Mushroom umami seasoning, 1/4 tsp ginger powder, and 2 tsp soy sauce) then add in sliced baby Bok Choy. Allow to cook with mushrooms for 2 minutes then add in edamame and peas). Stir to warm peas and edamame through and cook off liquid. Served this with some jasmine rice from @lotusfoods.
Oh me, oh my! This salad, let me tell you, was something else! What are those gorgeous looking slices atop the salad, there? I promise you they are not tofu. It is...FRIED CHEESE! Paneer marinated in yogurt and tandoori spices, then quickly fried on each side. If you think that recipe title is quite the mouthful, wait till you try the salad.
A tip...when frying the paneer, don’t move it around! Let it sit and do its thing to achieve proper browning. This is most often the rule to achieve proper browning, though I know it’s damn hard, because you wanna just keep loving on your food as it cooks! On my Facebook page, I have linked an article devoted to this rule. I was so happy to come across this article as I needed to hammer a reminder into my head. Sometimes we just can’t help being bad, I know!
