For me, cooking is one of the ultimate forms of sensory play. There is also so much real-life mathematics involved; measuring, fractions, estimation, division, grouping, pattern, addition and skip counting were just some of the skills used in our epic school-fundraiser bake up today. It can be a challenge to cook with kids, and we all know it makes the task take around 735 times longer, but boy do they get a lot out of it. Now please excuse me while I sit down with a nice cup of tea, and a sneaky cookie! (Of course I had to put a few aside for quality control and testing purposes 🤥🤫🤭)

Blueberry muffins 💙
Since having my first muffin in aaaages last week I have become somewhat obsessed on a quest to find the best blueberry muffin 😂
I like my muffins to be full of fruit, tasty (duh), and preferably with a nice crunchy top 🤤
After trying several cafe muffins, I decided to try making my own. These are very fruity (the way I like them), and I grilled them briefly at the end to get a bit of a crunchy top👌I think there is still some room for improvement (I’d like the top to be even crunchier🤔), but that’s okay with me because trying out new recipe variations means eating a lot more muffins! 😁
The recipe currently makes 4 muffins (double the recipe for more):
1/2 cup flour (I used wholemeal but white might be better)
1/2 tsp baking powder
1/8 tsp baking soda
2 tbsp sugar
1/4 cup + 2 tbsp almond milk
2 tsp apple cider vinegar
1/2 cup frozen blueberries
20g dairy free spread (e.g. olivani) or butter, melted
1/2 tsp vanilla essence
1/2 tsp cinnamon and/or lemon zest, optional
Preheat the oven to 220 degrees Celsius. Mix the dry ingredients in a bowl, and the wet ingredients in another bowl. Fold the wet ingredients into the dry mix, and bake in the oven (turn the temperature down to 180) for approx 20 mins or until skewer comes out clean. Optional: grill on high in the oven for 5 mins or so at the end until crunchy on top (watch carefully so they don’t burn!).

Monkey bento for my little monkey’s visit to Science Centre today. Banana & Blueberry Muffins. 💙💕 RECIPE: 3 ripe bananas (very ripe), 1/4 cup of softened vegan margarine,, 1 cup of brown sugar, 2 cups of flour,, 1 teaspoon of salt, 1 teaspoon of baking soda, 1 teaspoon of mixed spices, and 1 cup of Blueberries. By cup I mean mug, I just use a normal mug for easy sake! Questa è una torta buona ma leggera, insomma un dolcetto senza sensi di colpa, giusto per questo periodo pre vacanze , ma anche tutto l’anno!
