Tired of the Grind? Perk up, it's almost the weekend! #coffeepuns #pannacotta ☕🍮. . . I got the idea for this dessert while watching my husband make his morning vietnamese coffee, and thinking of today's food holiday #NationalCappucinoDay . The layers are reminiscent of a cappucino, but instead of plain milk the top half is a condensed milk panna cotta. The bottom half is an intense coffee panna cotta made by steeping the cream in a strong coffee and chicory blend before mixing it in with gelatin. After both layers set up, I topped the dessert cup with a thin layer of a mix of fresh-dripped vietnamese coffee and condensed milk. Lastly I piped a tiny heart with white chocolate. Egg Free Creamy Lemon Posset served with Lemon Shortbread. Ideal dessert for a dinner party, very easy and quick to make! Recipe: Lemon Posset ingredients: 600ml/21fl oz double cream 150g/5oz caster sugar 2 large lemons, zest and juice only Method: 1. Place the double cream and the sugar into a large pan over a low heat and bring to the boil slowly. Boil for three minutes, then remove from the heat and allow to cool. 2. Add the lemon juice and zest and whisk well. 3. Pour the lemon cream mixture into six large serving glasses and refrigerate for three hours. Lemon Shortbread ingredients (makes 18 biscuits): Biscuit: 1 cup butter, (softened) 1 cup powdered sugar 2 tbsp lemon juice (fresh) 1 pinch of salt 2 1/2 cups of All Purpose Flour Glaze: 1 cup powdered sugar 1 1/2 tbsp lemon juice (fresh) 1/2 tbsp milk Method: 1. Preheat oven to 190 degrees C. In a bowl/mixer, mix together butter and powdered sugar and lemon juice. When it is incorporated add in the salt and mix again. 2. Sift and add in the flour, and mix for a couple minutes. Keep mixing and it will start to be more cohesive. 3. Using your hands squash it together to form a ball. 4. Roll it out on a floured surface using a rolling pin until it is about 3/4 a centimeter thick. 5. Use a cookie/biscuit cutter to form biscuits. 6. Transfer to a lined baking sheet or lightly greased baking tray. Bake for 6 minutes (do not brown). Let them cool for 1 minute and move to a cooling rack. 7. Mix together glaze by whisking all ingredients together in a medium sized bowl. Glaze cookies by spooning glaze over the top, then let cool until glaze firms up. Happy halloween! These vegan brownies might scare off your family with the addition of two bright green whipped avocados but they manage to make the brownies more fudgey and buttery. Feel free to use plain white sugar as substitute for the turbinado sugar. Mix all the ingredients by hand, as an electric mixer might push air into the batter and cause eventual dryness and cake-like texture to the brownies . I attempted this recipe twice, once with regular flour and second with Bobs Red Mill gluten free 1 to 1 flour. The BRM gluten free flour brownies had a wonderful texture but I wasn’t a fan of the flavor. Regular flour tasted more mild and really let the chocolate flavor shine through. Top the brownies off with a dusting of powdered sugar and warm strawberry sauce. Sweet Potato Pie with Chocolate Drizzle. Made with 4 sweet potatoes (4 cups) peeled and steamed. 1/4 cup + 1 tbsp of raw crystallized honey (may have contributed to the pie slicing so beautifully🤪),1 tsp of cinnamon, 1 tsp of ground ginger, 1/2 tsp of nutmeg, and 1/4 tsp of cloves...all put into the food processor until smooth. Crust made with 2 cups of almonds, 20 gooey Medjool dates, and 1 tsp of cardamom. Pressed crust into a springform pan and then smoothed sweet potato mixture on top. Chilled overnight before drizzling with melted chocolate and slicing. haaaaaapy 1st of October 🍁 my friends! This is my very favorite month of the year. It’s when I begin fully embracing fall; our mornings are cooler and a little darker, the leaves start to fall, riding boots come out to play, and... 〰️WAIT FOR IT 〰️ Pumpkin 🎃. I won’t touch the stuff until Oct 1 and so my dear friends and family, I introduce you to the first of fall HEALTHY PUMPKIN SNICKERDOODLES. I wish you better luck getting from cookie dough to baked cookie than me because the dough was so tasty, I had trouble getting them in the oven. The recipe is on the blog but as a friendly October gift, I’m including it here as well: 〰️ Ingredients 3 tbsp Coconut oil melted 1/4 cup Pumpkin Puree 1/4 cup Maple Syrup 1 tsp Vanilla Extract 1/4 tsp Salt 1 tsp Baking powder 2 cup Almond Flour 1 tsp Pumpkin pie spice For the topping: 1/4 cup Coconut sugar 1 tsp Cinnamon 〰️ Instructions Preheat oven to 350F. Line a baking sheet with parchment paper. In a medium bowl, whisk together the coconut oil, pumpkin puree, maple syrup, and vanilla. Once combined well, add the almond flour, pumpkin pie spice, salt, and baking powder. Mix well, and place the bowl in the refrigerator for 30 minutes - this will make the dough firmer and easier to roll into balls. In a small bowl, add the coconut sugar and cinnamon. Remove bowl from the refrigerator, form balls with the cookies and roll each one in the sugar/cinnamon mixture (leave a few naked if you're not a sugar freak.. this cookie dough is INSANE). Place on baking sheet. Using the bottom of a cup or jar, press down to flatten to about 1/2 inch thick. Bake 10 minutes. Let cool on a baking rack. Aahh macarons! Ive been trying to make a perfect macaron for over two years and do you know what? I failed, they didnt have feet 😩. I do know when its time to give up though. And its time to give up. I love the look of macarons but I hate whats in them. They are full of sugar and the filling is also just sugar and butter (obviously vegan butter). So Ive decided thats it! Lady Earl Grey Teacakes. Hints of refreshing orange and lemon play so well with earthy bergamot and black tea. These delectable vegan teacakes are moist and light with fiber and protein rich oat and almond flours, creamy coconut yogurt and orange juice, without cholesterol, gluten, butter or processed sugar. Lovely for breakfast or afternoon snack. They are variations on the orange almond teacakes featured in previous post with recipe. The only change to the orange teacake recipe is to heat to just boiling 1/2 cup of plant based milk and add 4 Earl Grey teabags. Let steep until cool. When taking out tea bags, squeeze out excess liquid. You will be left with about 1/4 cup oat milk when poured into measuring cup, squeeze an orange and lemon up to the 1/2 cup mark. Next time I make I will grind up the contents of 2 tea bags to add to the dry ingredients to accentuate the earl grey flavors and cut the vanilla to 1/4 tsp as to not overpower the bergamot. For the icing, first make a lady earl grey simple syrup. Directions for Tea Syrup: Add to 1 cup boiling water, 4 tea bags. Let steep for at least 20 min., then take out tea bags. Pour tea into small pan along with 1/2 cup orange juice, juice of 1 lemon, 1/2 cup coconut nectar (no fat and low on glycemic), 3 Tbs Agave syrup and 1/4 cup monkfruit (naturally 0 calories). Bring to boil and down then simmer for up to an hour, whisking until greatly reduced. Let cool. Can make ahead. Icing Directions: In a small to med. bowl, hand whisk contents of 8 ounce container of @kitehillfoods Almond Cream Cheese until smooth and airy. Then add 7 Tbs of Lady Earl Grey Simple Syrup a few Tbs at a time, while whisking. Add 2 or 3 Tbs of coconut nectar of agave syrup to cream until desired sweetness. Refrigerate for at least 1/2 hour to thicken before spreading on cooled teacakes. Whenever I’m nervous to impress people, I bake. I don’t know where that comes from, but something about wanting my home to smell nice and wanting to look like I feed my family well. Truth be told we ate Chick-fil-A 3 times last week. But I started making this blueberry cobbler last night to make a good impression on a visitor and instantly panicked when I realized we were out of eggs. I checked the recipe 3 times and missed the word egg every time. Luckily we had some very ripe bananas that worked perfectly to bind the dough and bring a whole new flavor to the dish. As an added bonus, the dish became completely vegan and mostly allergy-friendly! Working on writing up a blog post for this scrumptious dairy free, egg free, blueberry cobbler.

My last hurrah: Roasted Macadamia Fudge 1 cup macadamia nut butter 1/2 cup coconut cream 1/2 cup coconut flour* Combine ingredients*. Press into a dish (approx 15cmx15cm. Refrigerate until firm. *ps- you can add sweetener of your choice to taste* Roasted macadamia nut butter: Macadamia nuts - around 200+ grams Coconut oil 1.Soak macadamias 12 hours 2. Dehydrate in approx 50•C oven 12 hours (I do it overnight). Spread out on a tray or two. 3. Roast at 170•C for about 10 mins or until golden 4. Salt to taste 5. Process in a blender until they become crumbs 6. Going to have a table at a Health and Wellness Fair tomorrow so I made these Lemon Lavender Cookies for the people to try. They are made with almond flour and local raw honey with 2 drops of Young Living's Lavender Vitality, which is FDA approved for ingestion. I love cooking with essential oils because they add so much flavor and something I always have on hand. I love that I don't need to go out of my way to buy an herb, spice or in this case an edible flower to cook with. I just go into my collection of Vitality oils that don't expire and add a drop or two to my recipe. Easy Peasy and oh so yummy! It also makes me feel like a Gourmet Chef! ❄️🍓❄️F R O Z E N D E S S E R T 🤤 This beautiful hot weather got me making refreshing super chilled desserts 😋 👍🏼Raw 👍🏼Gluten free 👍🏼Refined sugar free 👍🏼Vegan ☀️Base layer > 1 cup almonds, 1/3 cup desiccated coconut, 1/3 cup cacao, 1/2 cup dates (soaked briefly), 3 tbspns melted coconut oil ☀️Raspberry layer > 2 cups raspberries, 2/3 cups cashews (soaked 6+ hours), 1/2 cup desiccated coconut, 1/3 cup maple syrup, 1 tbsp chia seeds ☀️Top layer > 1/2 cup coconut butter or oil, 1/2 cup cacao, 1/4 cup maple syrup ☀️Blend base layer ingredients, freeze in a tray while making raspberry layer, add raspberry layer and freeze for an hour before adding top layer. Freeze for another two hours and remove from freezer 10 minutes before chopping. Serve right away or place back in freezer. Recipe- makes 6 pots Ingredients: 75g digestive biscuits 200g condensed milk zest and juice of 1 lemon 1tsp vanilla extract 150g cream cheese 150g 0% fat Greek yogurt 250g fresh strawberries 3tbsp strawberry jam Method: 1) Crush 75g digestive biscuits with a rolling pin. Divide the crumbs between 6 small pots/tumblers/ramekins . 2) Place 200g condensed milk into a bowl and add the zest and juice of 1 lemon and 1tsp vanilla extract. Raw strawberry coconut slice 1 cup coconut flour Pinch salt 1 tsp cinnamon 1 cup coconut cream 2 Tablespoons lemon juice 1/3 cup melted coconut oil 250 g punned strawberries - reserve 3 Optional sweetener of choice to taste •Dice the 3 reserved strawberries and set aside •Slice the rest of the punnet in halves and roast in a moderate oven for approx 10-20 mins until soft and the juice is beginning to seep from the berries into the pan. • Combine flour, salt, cinnamon in a bowl • add cream, juice and oil. •Add the diced strawberries to the coconut mix. •Mash the roasted strawberries to a pulp with fork or blender and add to the coconut mixture. Mix everything to combine. It should look like crumbs but you should be able to easily form it into a soft ball. Press into a rectangular tray (approx 20cm x 15cm but it doesn’t really matter). Gluten and Egg Free Giant Cream Cheese Chocolate Chip Cookies . Truth: I was not setting out to make these cookies yesterday. I was experimenting and trying to create the famous Levain Bakery's Chocolate Chip cookies except in a gluten free & egg free form. My experiment didn't quite work the way I had hoped. But was it a failure? NO WAY! The cookie that resulted was nothing short of amazing. . By using equal parts of cream cheese and butter, these cookies took on a unique texture and flavor all their own. Crisp on the outside, soft and tender on the inside, you will not believe that these bad boys have zero eggs and zero gluten to hold them together. . A luscious summer dessert... Rhubarb and Ginger Cheesecake topped with fresh rhubarb, rhubarb syrup and chopped pistachios. Recipe: Ingredients: 500g rhubarb chopped into 4cm lengths 150g caster sugar 1 blood orange, zested and juiced 1 vanilla pod 100g butter melted, plus extra for the tin 200g gingernut biscuits 500g mascarpone or soft cheese 100g quark or thick natural yogurt 1 tbsp pistachios, chopped Method: 1) Heat oven to 200C/180C fan/gas 6. 2) Line a large baking tray with baking parchment and fill with the rhubarb. Scatter over the sugar and orange zest and pour over the juice. Scrape the seeds from the vanilla pod in there too, throwing the spent pod on top. Cover with foil and roast for 20 mins. Remove from the oven. 3) Purée a third of the rhubarb, reserving the rest for the top. 4) Butter a 20cm springform cake tin and line it with baking parchment. 5) To make the base, put the biscuits in a bag and smash them with a rolling pin, or put them in a food processor and grind to crumbs. Tip into a mixing bowl, and stir in a pinch of sea salt. Pour the butter over the crumbs. Mix it together with a fork and tip it into the tin. Tap the side of the tin with your hand to even the crumbs out, and gently compress it with the back of a large spoon until it’s level. Put in the fridge to chill. 6) To make the filling, put the cheese and quark or yogurt into a mixing bowl and beat it together. Mix until combined and thickened, then fold through the rhubarb purée. 7) Pile the mixture on top of the biscuit base and smooth it down. Cover with cling film and chill overnight until set. 8) Remove the rhubarb from its syrup with a slotted spoon, tip the syrup into a pan and bring to the boil. Reduce for about 3-5 mins. Allow to cool. 9) Remove the cheesecake from its tin.
